Nice place you have on the beach, Dave!



I hope we aren't late to the party but here is what I brought to pass around.

Freshly cut pineapple....don't you just think of the islands when you taste fresh pineapple?



And...Chicken and Ramen Noodle salad (Original recipe found by clicking HERE)This is a recipe courtesy of the Wandering Coyote!






I used the following:

1 package ramen noodles

1 cup roast chicken

1 can sliced water chestnuts

1/3 cup chopped videllia onion

1 cup carrots cut into matchsticks

The dressing was easy:

seasoning packet from the noodles

3 tbsp Wesson oil

1 tsp soy sauce

1 tsp sugar

2 tsp rice vinegar


Break the noodles up into tiny bits, let warm water cover them for a bit so they are soft. Do not fully cook.

Combine salad ingredients in a bowl & toss with dressing.

This is from Wandering Coyote's recipe series, 101 Uses for a Roasted Chicken. And as always, this one is a keeper!

I'm enjoying everyone's island recipes today! I just bought two pineapples on sale at the grocery and was thinking of making pineapple sorbet.
Your chicken and noodle salad sounds delicious. I love ramen noodles.

I just got back from a little trip to the beach for the weekend. First chance Jackie has had to enjoy the island (you know that inconvenient day job!

and of course I am saving all these!

Just bought a pineapple (but it is going into a rum cake tonight, but they have plenty)

Oh am so enjoying these pineapple delights .....loved ur salad and would love to make this one...i can picture evrybody popping with pine apples....in a deliciously cutey way...

This sounds so easy and tasty. Ramen is one of those staples my kids are always eating. This would be a great way to use it!
