IHCC: Well, the female chef for the next six months over at I Heart Cooking Club is Tessa Kiros. I am excited about that as she has a few cookbooks that appeal to me......I am hoping to make a few of her recipes over the next six months she is featured.

The theme for week one is quite appropriate - it is Welcome.
For starters at a party I would have a salad........so, here is a salad for Tessa.
Greek Salad
ripe tomatoes, quartered
1 cucumber, sliced thickly on the diagonal
1 small red onion
a few kalamata olives
1 heaped tablespoon of capers
crumbled feta cheese
1 teaspoon of dried oregano
4 tablespoons of olive oil
1 tablespoon red wine vinegar, optional
Put the tomatoes, cucumber, onion, olives and capers into a serving bowl. Put the feta on top and crumble the oregano over with your fingers. Drizzle the olive oil over, and vinegar if using. Serve with bread.

Now, what would I wish for??? A new cookbook! I was hoping to get one for my birthday last week, but looks like I'm going to have to wait until my 17th wedding anniversary next month. :)
As a Greek I couldn't say no to a beautifully made Greek salad as this one Pierce! Can't wait for many more of your adventures in the Greek Cuisine!

Love your recipe..congrats on the gift card..I need a new faucet badly, nothing fancy just one that doesn't leak, brand new..our oven is 33 1/2 years old, the broiler unit fell off from the top of the oven, it works, but only 3 burners work out of 4 burners, I just would love to have an oven that worked with 4 burners and a faucet that is new..oh, what a dream for our home..Keep up the receipes they look so yummy, happy fall and happy halloween, maryjane at momanddad00@clear.net
I love your Greek salad - transports me back to my Greek island holiday earlier in the year when hardly a day went by without one of these. I am soooo wanting this book so that's exactly what I would choose if the Fairy Hobmother were to pick me :-)
