A week of meals in photos #2
{Lamb-Centric is the theme}

The more I try this meal planning by writing it down, the better it should get…right? This time I am starting the recording on a Sunday. This particular week we got into a run with lamb dishes as we purchased a leg of lamb from Costco.

We both love lamb. Doug cuts some up in chunks for stews or kebabs and grinds the rest for things like Nigella’s Rapid Ragu or any dish where you’d want minced lamb.

The commitment to this is tenuous as I’m not always good about getting the photos. Each week I do sit down and plan out our meals so I know what to pull from the freezer or pick up at the grocery store. Here is my second attempt at actually posting it.

Sunday and Monday: Lamb Stew

Tuesday: Roasted chicken with rosemary and carrots, sour cream mashed potatoes, fresh corn cut from the cob cooked in olive oil and butter. Garlic toast. (The leftovers made for nice lunches)

Wednesday: Rapid Ragu with cheese and rice

Thursday: leftover Rapid Ragu

Friday: Shepherd’s Pie and a ciabatta loaf. (I used a photo from a previous meal as I forgot to snap one this time. This is a recipe my friend Jo gave me - see link)

Saturday: Leftover Shepherd's Pie. The rest we took for lunches during the week. Same with any bits leftover from all meals when we have enough.

Sunday: Garlic Scallops, vegetable risotto and fried breaded okra.

This a simple meal here. Just brown some garlic in butter and then add scallops. They don't take any time to cook. I'm afraid I used too much garlic in this batch and some scallops were a little bitey. The risotto is a cheat sort as I bought the packet to make from the seafood market. It took some stirring time but not as serious as a carefully planned risotto.

I think I have some of the days mixed up but what the hell....here is a week of meals. I am still writing them down and now (Duh) I will put the dates in my notebook :-)

  1. We love lamb too! I'm inspired! I'm going to try to remember to photograph a week of meals ... after the new year. I too plan our meals, which I only started doing about a year ago. I never thought I'd like doing it, but I do!

    1. I am happy to be an inspiration! Usually we plan out a week of meals, not down to having which one on a certain day, not that rigid.
      It's getting photos each time, that's my downfall.

  2. Leftover lamb makes the best Shepherd's Pie. When I come back from France in the New Year I am planning to go back to proper meal planning ... and a freezer defrost to help that out!

    1. Mrs L, I always make a list for the week and then we decide which of the meals we want each night.

  4. It's been many years since I've had lamb and it didn't make it onto my like list. I should try it again and see if my taste buds have changed. Your food looks good.

    I know - thankfully we are not big New Year's Eve celebrator/party-goer(s) - I'd rather be somewhere quiet with a nice bottle of rose than at a noisy shindig.
