Nigella's Pancakes



Since my March 3rd proclamation to cook everything in the Nigella Express cookbook, I have managed to mark off 17 recipes in the book.

The latest to be struck off are her delicious pancakes. I love pancakes and just don't eat them as often as I'd like. Once you put the dry ingredients together it's a snap to make these anytime.


For the Pancake Mix

4 cups flour

3 tablespoons baking powder

2 teaspoons baking soda

1 teaspoon salt

2 tablespoons plus 2 teaspoons sugar

Mix the above ingredients together and store in a jar.

For the Batter and the Pancakes

1 egg

1 cup milk

1 tablespoon butter, melted

For each 1 cup of pancake mix, add and whisk together the ingredients.
Behold the official Nigella whisk my son bought me for mother's day! How appropriate for Nigella's pancakes.



Heat a dry flat griddle or pan—no need to oil it.


Spoon 1/2 to 2 tablespoons of batter onto the hot griddle and, when bubbles appear on the surface of the little pancakes, flip them over to make them golden brown on both sides. A minute or so a side should do it.

Such a poor photo...I don't know what happened that it was out of focus.... but the taste was very good.



They are good all on their own but served with bacon.........



Adorn the plate of eggs with bacon.......Aunt Ellen serves her eggs this way too.



Camera skills were shaky...the pancakes received good marks though. This a good mixture to keep in the pantry for a fast breakfast!

  4. I love that pancake recipe BUT unfortunately the British don't generally make pancakes with savoury breakfasts ... so Simon won't even try pancakes with scrambled eggs and bacon. I am very un-general for a Brit and adore bacon, eggs and pancakes ... with mushrooms, sausage and maple syrup on the side!

    p.s. I have 2 of those whisks ... not keeping 1 in my handbag (like Nigella does) just yet though.

    Donna - WC is correct, this is a great mix to have on hand and esay to put together. As a matter of fact, it was the Coyote and Joie de Vivre who discussed this mix before I took a shot at it from Nigella Express.

    Girlichef - Nigella is one of my favorites.

    Jo - Well, you are Welsh and my grandmother, of Welsh descent, loved all combos of food....you know, when we vacationed in England I don't recall seeing pancakes on any of the menus now that you mention it.
