Caponata and Tahini Hummus on toasted baguettes.......a toast to The Olive Farm

When I read my escapist ex-pat literature and dream of southern France or Italy, the mental images of eggplants, caponata and tapenade come to mind. The little bites of appetizers you might enjoy sitting in the shade of Carol Drinkwater's patio, the hot breeze licking your cheek as you sip an ice cold glass of white wine and nibble bruschetta.

Eggplant, tomatoes, celery, onions, olive oil, wine vinegar, capers and sea salt........all natural stuff.....

  1. Oh...dream... I get almost fanatic about wanting to be an expat. Does that sound horrible? I can just imagine my life in a new country and new lifestyle. Sigh.

  2. I do the same............we've looked into it and some countries are easier than others to move to......but, the finances are the crippling factor!

  6. Drick, I think that was a long time ago! For what it's worth, Costa Rica is pretty easy to move to and Ireland would allow us to take our dogs as long as all papers were in order. England requires a proven source of income of at least $25,000.

    Janel - me too, I can "travel" that way!

    Katerina - and you know, they are some of my favorites...would love to visit Greece one day!

    I love her books too.....she sure works harder than I do though at that olive farm.
