Curtis Stone Pizza - I need advice on the dough, please

Pizza night is usually takeaway so everyone gets a break. Pizza and a movie. And some wine. OK, an entire bottle of wine. Then if the movie isn't great it's not so painful. But I like to make a pizza now and then because, they are always better.

Ok folks, here is where I need help. Look at this pizza. I tried rolling it and stretching the dough and each time, it would creep back and shrink up. Almost impossible to get a flatter crust no matter what I did.

Any suggestions? I can make bread and shape it the way I need it but pizza dough.... Forgetaboutit........

I'm not saying this pizza wasn't good. It was very tasty and I would love to make it again but I sure would like to get the dough flatter.

  1. I love pizza and used to make it myself but now it's usually bought. My son did make a homemade pizza a few weeks ago though.

    To get the dough to stretch out, you need to let it rest a little between each stretching. At least that works for me. And I use a lot of oil on my hands.

  2. I use a flatbread recipe to make my dough. After I portion it out I cover it with a damp towel and let it rest for 15 minutes or so. We love to have pizza fantasy night with a load of different toppings.

  3. Resting the dough is key when it's no longer elastic. Use 00 flour if you want to make thin pizza.

  4. I use regular plain flour, it does tend to stretch out , i use my hands to stretch it into the pan I am using, use very little oil on the pan maybe a bit of semolina and then stretch it out. hope it helps.

  6. I am with flour.ish.en Resting and patience is the key. And I have a tried and tested fridge pizza dough. Since the beginning of blogging I prefer homemade pizza. And it is the taste that counts, isn't it?

  7. Yummy pizza! Resting the dough for 5 to 10 minutes helps, though you got to be patient, it might take a few tries before the dough will "behave"!

  8. I'm with you! Once a week needs to always be pizza night to help make time for other things like relaxing and drinking! I've had that same issue with pizza (shrinking dough) and I think the others are spot on. When it starts shrinking you have to let it rest (sometimes I have patience for that and sometimes I just don't). I feel like either way it is still good;) Another glass of wine and it won't matter how the pizza dough turns out!

  9. I love homemade pizza too. My husband is usually the pizza maker in the family. He uses an overnight dough the most. We never have a flat or thin crust pizza though. Good luck next time.
