Cucumber, Tomato & Onion Salad for Souper Sunday

How excited are you all in the northern hemisphere that summer is winding down? I am very excited to think about pulling out flannel shirts, boots, scarves and best of all – jackets!

Hello, my name is Tina and am a hoarder of jackets. Stupid thing to have a weakness for when I live in steamy ol’ Florida. But there it is, that’s what I love and so, I will tell you…. I currently have 6 motorcycle jackets and I could easily get by with 3. One ventilated for the hot weather, one medium weight for chilly weather and one for very cold temps and dealing with wind chill in the months of December through February.

But yeah, I have six jackets and love them all. And this has what to do with summer salads? Nothing. I just got on a roll typing about my winter clothing.

My purpose is to share a cool Cucumber and Tomato Salad I tossed together for a dinner recently. My preference for cucumbers is to have them diced instead of sliced in salads. I chopped a half a cuke and about ¾ pint of cherry tomatoes and a bit of a small onion, maybe a ¼ cup of onion in total.
Stir this up gently and drizzle your favorite dressing over the salad. I think an olive oil based dressing works best. It’s that simple.

This wouldn’t make a great main meal salad, not enough bulk, but it’s a great little side for a variety of meals.

Note: I was preparing this post pre-Hurricane Hermine so it's not indicative of what we ate during the storm. But for next week's offering I have a few things to share we prepared in preparation of losing electricity. Got it all ready and cooked in case we needed to heat food using the camp stove.

  1. Refreshing summer salad. Add a pouch of tuna and you've got a full meal! (well, some homemade bread might be needed).

    I love jackets and sweaters. Sooooooo happy for this week's cook temps. Hope they are here to stay.

  2. This looks delicious! Our tomatoes here have been scarce but I do have some cherry tomatoes I need to use. I can totally relate to the jacket obsession. While I don't have motorcycle jackets I have probably 15 or 16 different coats. While we do have more of a winter than you do it make be a bit overkill! The thing is I still want more because I don't have on with toggles and that seems necessary. Did you lose power? Hope everything is well! We don't have hurricanes but we do have our share of tornadoes so I'm familiar with the damage and power loss.

  3. Two hurricanes have just given us a miss. Relegated to tropical storm status. Good weather for salads though, warmish and muggy.

  4. Anything with tomatoes works for me! Just had some fried.

    I am a huge lover of all things summer. But also like cosy warm sweaters and jackets. I also have way more than I need. And boots!!!

  6. Chopped salads have such eye appeal as well as tasting good. So many ways you could vary the ingredients and still have such a nice side dish.

  7. I think I would use chives instead of onion in the summer. I hardly ever see a simple salad like lettuce, tomatoes, and cucumbers. That was the only salad that was around in my childhood. Now salads are full of cheese and nuts and anything else you can think of!

  10. Reminds me a bit of an aspic that my mom makes...though she adds avocado and bacon but not the cucumber. I think ALL of it would be great together (I mean...what doesn't bacon make better?!). Hope that you guys were unscathed during the storm.

  11. Mmm... I love this kind of summer salad. This and a burger are the sort of dinner I could eat all year round, really, but especially while the weather is too hot to move.

  12. Glad that you made it through your storm in good shape. We got off easy with ours. (Huge sign of relief!) This salad looks delicious--I am always a fan of cucumbers--sliced or chopped. ;-)
