Grilled Amberjack

A hot charcoal fire was just the ticket for these two fat amberjack fillets. It's a great tasting fish yet inexpensive. It runs $6.95 a pound around here and it always tastes great. Very moist and flavorful.



Fry up polenta, about an inch thick each and roast some cherry tomatoes in a 350 degree oven. Toss in the French loaf from the night before to warm.



When the tomatoes come out of the oven arrange on a plate with the polenta and top with a bit of goat cheese. The tomatoes will be just hot enough to melt it slightly. It's a nice combo of flavors.

  1. I've never heard of amberjack before. Where does it come from? Looks good, though!

  2. Amberjack is one of three species of Jack, and include the Pompano, and range in size from 15 lbs to 150 lbs. They are found in abundance around Florida, and are excellent either grilled or smoked. The texture and flavor is similar to Mahi-Mahi. Low in calories and fat too!

  6. It's so good - and cheap! If you can get I recommend it WC.

    By the way, you like Giada and I was wondering if you would recommend either one of her cookbooks or a recipe.

    I have tried her Bolognase sauce before and it's excellent.

  8. Never heard of Amberjack BUT I love Mahi-Mahi. What's the otehr component on the plate is it spaghetti?

    Off to make chicken curry with saag and dahl tonight.

  9. Donna - I don't think I will be able to solve my issue with the comments. When I go to your blog, and Laquet's, the comment format looks different and it allows me to type, but whne I click submit I have "error on page" messge. I am stumped, because it obviously isn't happening to anyone else. I guess.

    Laquet - Love Mahi Mahi. It's wonderful grilled and low fat! Also on the plate with amberjack is angel haor pasta and scallops - a small side dish.
