Sour Cream Banana Pancakes
THIS was a wonderful treat for a Sunday breakfast. I had planned to make this on Saturday morning but when I was about to mix everything up, I discovered I was almost out of all purpose flour. How could this happen??!!
I pouted so much over this tragedy. Obviously I went out that very day to buy enormous quantities of flour so this will never happen again.
Now, I don't know who to credit for this heavenly concoction....but it's someone with a husband named Jeffrey as that information is mentioned up front. The rest was cut off my paper.
Here are the ingredients you'll need:
1 1/2 cups all purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1 1/2 teaspoon salt
1/2 cup sour cream
3/4 cup plus 1 tablespoon milk
2 extra large eggs
1 teaspoon vanilla extract
a bit of unsalted butter
2 ripe bananas, diced
maple syrup
In bowl, mix flour, sugar, baking powder and salt.
Whisk together sour cream, milk, eggs and vanilla.
Add the wet ingredients to the dry ones, mixing until combined.
Melt one tablespoon butter in skillet and once it bubbles, ladle some pancake batter into the pan.
Add about a tablespoon of diced bananas on top of batter.
Cook 2 to 3 minutes until bubbles appear then flip them.
As I cook them I put them in a warm oven so we can all eat together. The aroma of the cakes will make your mouth water.
We served with maple syrup and sides of bacon.
I am the pancake fan in the family and the guys prefer waffles.
How about you? Waffles are good but I love pancakes. These were a hit.

I love both pancakes & waffles. I can't do stuff with banana in it, though.

Oh, I like bananas - I just don't like baking with bananas in it. Call me crazy.
