Leftovers make good lunches





A few days ago I made Nigella's Buttermilk Roast Chicken and it was a pretty big hit. Not only was it easy, but tasty too...and..a bonus is always making soup with leftovers.

A few pieces of chicken.....




Whatever veggies you have on hand......this particular day I had a few mushrooms, celery, carrots, yellow squash and a half an onion.




A block of frozen homemade chicken broth and leftover linguine........




Simmer it for a half hour..........



Served with sweet iced tea, French bread and a few slivers of Gouda cheese........a healthy and inexpensive lunch.

  1. Nice! Looks really good, Pierce, and yes, it is very inexpensive to make soup this way. Speaking of which...I have four chicken carcasses in my freezer...

  2. I always seem to have carcasses in the freezer...but they sure come in handy. I'm also very cheap so homemade broth...oh yes.

  5. I love recipes say that you can use any vegetables, in the house. It makes life easier and uses up the stray veggies. Soup is a base for any vegetable. Your looks really good.

  9. I love it! I NEVER throw away food - we live in a world where a lot of people starve, and I respect food! But I do not like eating the same meal twice, so I accomodate left overs the best I can. Your recipe is great!

    Laura - it took me a long time to use everything that was leftover. I'm ashamed at the amounts I used to toss out years ago.
