Wow, only a few more weeks of Nigella recipes over at IHCC. I still plan to work my way through Nigella Express, even after Nigella's time is over with the cooking club., But I have to say, it's been a fast 6 months. I am very curious to see who the next chef selection will be....Bobby Flay? Jamie Oliver? Mark Bittman?
For my contribution to Tea Time I made Breakfast Bruschetta. But we had it as an appetizer. Good recipe and fast to toss together!
Scoop out avocado pulp and mix with lime juice and salt and pepper. Chop fresh tomatoes...now you have your toppings.......
Slice up some good quality bread (the recipe says use sourdough but I didn't have any on hand)
Toast the bread.......
Brush your toast with olive oil or butter and top with avocado and/or tomato mix....
We had this as an appie prior to one of my all time favorite Nigella recipes, Rapid Ragu. Recipe can be found HERE.
I just put the leftover avocado and tomato on the table to have with the Ragu.
Good eatin'......
