Magazine Monday - Mahi Mahi with Bacon-Tomato Butter




Welcome to Magazine Monday! I am guest hosting today for Ivonne of the blog Cream Puffs in Venice while she is on vacation. I hope you'll enjoy the roundup - I had many submissions!

Before I start with my submission and the roundup, I would like to say thank you to Brenda of Brenda's Canadian Kitchen and JonesGeneaologist for following my blog!

Yesterday it was a joint effort in cooking - Doug grilled and I prepped the rest of the meal inside.

Mahi Mahi with Bacon-Tomato Butter,



Ingredients............

2 cups water
1 TB fine sea salt
2 teaspoons sugar
4 (6 0z) Mahi Mahi fillets
1/8 teaspoon table salt
1 slice center-cut bacon, finely chopped
1 garlic clove, thinly sliced
¼ teaspoon smoked paprika
2 plum tomatoes, seeded and diced
2 TB butter



Combine first three ingredients in shallow dish, stirring until salt and sugar dissolves; add fish. Let stand 20 minutes then pat dry. While the fish is sitting around, get that charcoal fire going.




The recommendation is to use a charcoal or wood fire as it imparts an intense flavor. But a gas grill lends a subtle flavor so…whatever inspires you :-)
Grill the fish; this should take about 10 minutes or to your personal taste and the intensity of the fire/heat.

Meanwhile, while Doug is standing outside, safe from mosquitoes thanks to the ThermaCELL.

I am inside, heating a small skillet and cooking bacon. After 5 minutes, I add the garlic…stirring away, I then add the paprika, the the tomatoes and cook for 3 minutes. Mix it up well. Now toss that butter in the pan and the 1/8 teaspoon salt. That is all!



Place the fillets on plates and top with a bit of tomato-bacon butter. Heavenly…and it’s from Cooking Light…how awesome is that?! Bacon and butter….and it’s healthy.



Fantastically easy and unbelievably delicious!

Jan at Kitchen Heals Souls made a lovely summer potato salad with Quebec fava beans. This is from Delicious magazine, a UK publication. One look at that salad and you will certainly want to make some for yourself!

Heather @ Girlichef made Chimichanga Dogs from Food Network magazine. We love hot dogs and this version is over the top!

  3. wow ... grilled fish really does take on a wonderful flavor and I like the simple approach in seasoning it, the sauce sounds so simple too and I know added a great flavor... thanks for this one

  10. Tina- Wow! You are really selling me on the cooking light magazine. This meal looks quick, easy, delicious, colorful and just plain fabulous!

    You did a great job with your roundup and I'm off to check out what everyone else made.

    I feel so bad that I didn't participate. I picked out my recipe, bought all the stuff and my weekend didn't go as planned at all.

    Thanks for the warm welcome back. I can't believe how much your blog has changed! It's beautiful! And you're hosting an event? Wow! How does one participate? Make something from a magazine and link to you? I will definitely do that next time I cook from a magazine! I just started subscribing to Simple and Delicious and although the recipes are nowhere near as elegant as what you made, they suffice. I'll be around! Thanks again. :)
