The theme at IHCC is Potluck…..love that theme cause I can do anything, any recipe and still participate,
Food Network has a host of Giada recipes and if you click HERE you’ll see the Giada recipe I modified. I simply substituted bay scallops for the shrimp.
Doug had to attend an out-of-town meeting just a day after we returned from vacation. Since it was on overnight trip but he got back late, I needed a fast meal to prepare so the dinner wasn’t sitting around getting old. This one fit the bill – fast prep and light. 10 minutes is all this took to toss together,
One reason I substituted the scallops in is because peeling raw shrimp makes me break out. Rashes everywhere. I wasn’t about to ask Doug to get in late and then peel shrimp……besides, scallops are very tasty.
Serve it up with some crispy garlic bread and a salad....great meal, easy to toss together...a Giada winner for us.

ReplyDeleteYum - I actually have Giada's Linguine with Shrimps & Lemon bookmarked to make at some stage - the scallops are a great idea for a substitution, and we have them in season here right now, so I'm going to try this very soon. Thanks for the inspiration.

ReplyDeleteI love scallops and don't use them very much for some reason. I think I would prefer this dish with scallops over the shrimp. Looks wonderful and beyond easy.

Brenda - Thanks, I like the small bay scallops but you can use the giant sea scallops too.
Drick - I used to be able to peel shrimp.....I can with plastic bags on my hands!
Natashya - We like all sorts of seafood. Bay scallops are always easy to get here.

My favorite kind of meal--quick, easy and delicious. And of course anything with pasta and lemon is a winner in my book! ;-)
