Tortellini Amatriciana

I just finished reading Eat Love Pray.



Ohmygod did I ever hate this book. Elizabeth Gilbert is a talented writer and can thread words together as an artist. But did I like the character Elizabeth in her memoir ? No….not really. My full review may be found HERE

After that I deserved Italian food!! Here is what I made.



Tortellini Amatriciana

What you'll need......

1 (16 oz.) package tortellini
1 onion, finely chopped
3 garlic cloves, chopped
4 oz. diced pancetta (or thick cut bacon)
¼ teaspoon red pepper flakes (adjust to your taste…if you like it hotter, add more!)
1 (28 oz.) can Italian plum tomatoes with juices

In a large saucepan heat some olive oil. Add chopped onion, garlic, pancetta and red pepper flakes. Saute 2 minutes. Stir in tomatoes with juices and a bit of salt to taste. Break up tomatoes with the back of a spoon. Bring to a low boil, reduce heat and simmer 13 minutes.



Meanwhile, heat a pan of water to boiling and cook tortellini. Drain after it’s cooked through.

Add tortellini to sauce and toss it to coat. Sprinkle with grated Parmesan cheese. We liked this meal quite a bit and it's a quick one to prepare when you have little time.

  3. Anything with pancetta makes it good. This is what I added to your review.
    I finally found someone who thinks like I do! I thought I was the only one and that I was nuts. Everyone seems to be in love with this kind of ........I refuse to go see the movie.

  4. I hated this book as much as you. I wouldn't even consider going to see the movie. When the movie came out in Toronto last year, the critics called it Sit, Stare, Yawn, lol! The meal sure looks good though! I'm glad, too, I'm not the only one that hated this book......

  11. Amatriciana is one of my favourite sauces - I haven't made it for ages, I wonder why? Yours looks particularly beautiful.

    I am glad you said that about the book. I haven't read it because I thought she sounded unpleasant even when people who loved the book described it!
