Easy Peasy Risi e Bisi…c’mon….roll the R………..rrrrrrrrrrrrisi e bisi
Italian–style peas with tangy Parmesan Cheese is a new favorite. Another fantastically easy recipe that will certainly grace our table again soon.
Have I mentioned I really like the Glamour cookbook? A few posts back I made a banana bread from the book: 100 Recipes Every Woman Should Know .... Sadly, I had to return the book to the libray before cooking too much more from the fantastic recipes.
This one, Risi e Bisi was great!
Serves 2 as a main course or 4 as an appetizer. For us it was a side dish with grilled chicken.
Here's what you need!
1 TB olive oil
1 small onion, chopped
3 garlic cloves, chopped
½ cup orzo
1 ¼ cups chicken or vegetable stock
¾ cup water
Salt and pepper
1/3 cup Parmigiano-Reggiamo cheese
1 cup frozen peas
Orzo is a rice-like pasta that cooks up like a risotto. It rich and creamy…just as the book promotes.
Ok, ready to go?
In small saucepan heat oil the add garlic and onion. Cook, and stir a few times, until golden and softened.
Add orzo to the pan and cook 2 minutes.
Add stock and water, season with salt and pepper.
Bring stock to a boil and then simmer on low heat, covered, for about 20 minutes. Stir occasionally.
Stir in cheese and peas (I added a bit more than 1 cup) and cook for 5 minutes more.
Be prepared to love this creamy dish – yum! This cookbook is going on my wish list :-)
