Lemony-Maple Sweet Potatoes

First off, I'd like to thank A Platter of Cakes by Beata for following my site!

It's been awhile since I participated in Magazine Monday. Time to flip through the huge pile of magazine recipes I have hoarded.

Jennifer Garner’s Lemony-Maple Sweet Potatoes was a featured recipe in People magazine a few months ago. Yeah...I am just getting around to trying it. Sorry I waited though.

The movie star and mom of two shared a side-dish she loves t make during the holiday season. I say, why wait for holidays?! I love sweet potatoes. Doesn’t have to be Christmas or Thanksgiving for us to enjoy them.



Ingredients....

2 pounds sweet potatoes, peeled and cut into 1 ½ inch chunks
1 TB olive oil
½ teaspoon salt
1/8 teaspoon black pepper
2 TB maple syrup
2 TB lemon juice

Preheat oven to 375 F.

Toss sweet potatoes with olive oil, salt and pepper in a large baking dish. Cook until almost tender, 30 minute.

Whisk syrup and lemon juice in a small bowl.



Remove potatoes from the oven and drizzle ½ maple lemon mixture over potatoes. Stir gently and return to oven; bake an additional 10 to 15 minutes or until potatoes are golden brown.

Served with a grilled rib eye and skewered tomatoes.....mmmmmm

  2. fall must be in the air somewhere, I mean sweet potato dishes are everywhere, but I am like you, I eat them year round, yams too when they come around... never had lemon on them before, normally put a jigger of bourbon on them about halfway, burning off to sugarlize with the starches...oh lord, must be tired, reverted back to me, me, me... meant to say, love swt potatoes with steaks, and that's the truth...

  4. Ribeye is my favourite cut - slurp! Sweet potatoes and steak - hubba, hubba!!!! I don't think we work the whole sweet and savoury thing as much as we should/could in the UK - looks delicious T.
