Real Simple has very good recipes. And yes, they usually are simple
A few days back Doug grilled Mahi Mahi (to perfection). The amount we purchased was too much for the two of us so I froze a portion. Of course it needs a good side dish. This is where Real Simple came to the rescue.
This recipe was modified - the original added sausage (in addition to the shrimp) but I wanted to stick with the seafood theme.
2 teaspoons olive oil
1 medium yellow onion, thinly sliced
1/2 cup white wine
2 cups chicken broth
12 saffron threads, crumbled
1 cup long-grain white rice
3/4 pound medium shrimp, peeled and deveined
1/3 cup frozen peas
salt and black pepper
fresh cilantro (optional)
Heat the oil in large saucepan over medium heat. Add onion and cook, stirring occasionally, for 5 minutes.
Add the wine and cook for 2 minutes. Add the broth, saffron, and rice and bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
Stir the shrimp and peas into the rice, cover, and cook for 5 minutes. Remove from heat. Season with ½ teaspoon salt and ½ teaspoon pepper.
Spoon onto plates or bowls and add the cilantro (if desired).
