Wrap it up - Assorted Ingredient Combos with Shrimp, swordfish, roasted chicken, black beans....you name it

Want to see all the different wraps we have been making?

Wraps, soft tacos or quesadillas..........they are so similar. Depends if you stuff a soft tortilla and fold it, or roll it so it's all contained or heat it up and let the ooey gooey cheese seal the tortilla.

Wraps, etc. are ingenious ways to use itty bits of leftovers that wouldn't otherwise make a full meal. But bring a tortilla out and chop up some lettuce, tomato and shred some cheese..........all you need are little bits of leftovers to make a dynamite lunch. Now if you press this in a pan, it's a quesadilla. Either way, it's good food.




An easy meal. Fun too....cause hands on is always fun. This one consists of mainly veggies sauteed in olive oil. Lots of red and green bell peppers, onions, garlic, scallions and I even tossed in some zucchini. Add chicken too.




These are shrimp and grilled swordfish. Fan-freakin-tastic. I love the seafood ones best of all. The fish came from the leftover Mojito-marinated Swordfish.



A dollop of sour cream and you are in business.




This one is from roasted chicken...........just not enough chicken left for soup. We even spread some refried black beans into this one. Wrap it!



Clearly the combinations are endless, depending on your tastes, and what a laid back meal. One that doesn't heat your kitchen when it's so terribly hot. (Not for my friends in the southern hemisphere, obviously. Yes, Sue, I mean you! It's Fall for you. Lucky woman.)
