Chicken stroganoff & peach cobbler

It's been a lazy week here and I only prepared one new recipe. 

 Chicken Stroganoff was mentioned on Marg's site and then Carole made a beef stroganoff last week so...I was wanting to have that for dinner. Tyler Florence had a pretty good recipe so I adjusted it to suit our taste.  I really wanted to use chicken instead of beef so that's the first edit.


The answer is yes to sour cream. I know some of you mushrooms haters will cringe but I added double...cause we love them. If you'd like to view Tyler's recipe click HERE and then make your own adaptions as I did.


Peach cobbler was next to try and it didn't come out as planned so I had to add more of the reserved peach syrup to moisten it. Vanilla ice cream helped it along. This was a Paula Deen recipe from one of her books about cutting back on sugars.  I had a copy of it and had been meaning to try it. Meh...


 

That is the short and sweet post from me this week.  I hope everyone is well and didn't have damage from those horrific storms that sliced across the U.S. this week.

  1. I like making cobblers, crisps, and crumbles with fresh fruit. I have strawberries in the house ... I may *have* to bake this weekend. LOL. I noticed all those stroganoff recipes last week. We love mushrooms, so doubling up sounds perfect.

    1. BFR, if there is call for mushrooms in a recipe we always double it. Heck, sometimes I add them anyway in a recipe to bump it up, just not in cobbler. Ha.
      Perhaps using the canned fruit was the problem and I can’t wait to get fresh.

  2. Maybe cobbler just NEEDS sugar! I haven't done stroganoff for a long time because we have been cutting back a lot on our meat consumption, but I've always loved that sour cream sauce. And we are 100% with you on mushrooms: the more the better.

    1. Mae, I noticed her recipe had a typo calling for 2 tablespoons of butter then in parentheses it stated 1/4 stick.. well a quarter stick is four tablespoons. So I split the difference. That was probably part of the issue.

  3. My husband loves beef stroganoff, I think making it with chicken would be a nice change of pace.

  4. I made a stroganoff for John years ago before he went to pitch a baseball game and he was so sick! Haven't made it since.
    I do think it was the canned peaches that didn't work.

  7. I wouldn't trust Paula Deen for healthful recipes! haha Maybe you might want to look at the cookbook Baking with Less Sugar by Joanna Chang. I made granola/energy bars from it and they were delicious.

    1. Laurie, this cookbook, which I had made the copy from, was after her diabetes diagnosis and she was cleaning up her recipes. So I thought....might be good!

  8. I just can't with the mushrooms. I don't mind the flavor but I cannot get past the texture. I do love the idea of substituting chicken for the beef though. Oh that peach cobbler has my mouth watering! I love peach cobbler and may have to find a restaurant that makes it that does carry out because my weird family doesn't like them!

    1. Katherine, my son's girlfriend is the same as she doesn't like the texture. I get that. Hey, you probably don't go through Tylertown anymore but there is that restaurant with the amazing peach cobbler....mmmm

  10. I'd rather use chicken for the stroganoff, too... and the more mushrooms the better! I was making a ton of fresh fruit desserts last spring, then backed off a little. Might have to start again with all the delicious berries we've been getting lately.

  12. I like mushroom a lot, so the chicken stroganoff will always work for me. The creaminess of the dish is appealing.
