At least once a week I try to prepare a new recipe. This week it was a hearty salad and it's a keeper. We had everything handy in the pantry and fridge - no unusual ingredients here so it's a good throw together lunch.
Here it is without dressing so you can see the ingredients well.
Top with any dressing you want but we used ranch. I bet a honey Dijon or balsamic vinegar would be good as well.
If the chicken and bacon is precooked and you don't mind raw corn, there is zero cook time for this salad. I needed to cook the bacon so afterwards I sauted the chicken chunks in the pan. Well as long as I had a hot pan I tossed the freshly cut corn in there as well.
Now it's a matter of plating it nicely.
Grab a large bowl and plate the lettuce. Place chicken in the center then surround with halved cherry tomatoes, a few scoops of black beans, corn. Top with bacon bits. That's it - easy peasy!
We have tried it with the corn and black beans slightly warmed and it's good. We made it again the next day and added avocado - that is very good. It was a smooth combo of tastes.

Deletethis looks delicious tina. we don't eat bacon these days but i guess you could leave it out. A friend likes to sub bacon with capers so maybe i could use that ...

DeleteI saw your comment about the heat on my blog and I am right there with you! I'm so done with the 90s/100s! This looks delicious and perfect for days that are just too hot to cook. Ranch sounds good but now I want to try honey Dijon! I bet that would be amazing. I will have to put this together for lunches!
ReplyDeleteKatherine, the first day of Autumn we had record high temps! Ugh. We are currently watching the progress of a storm whohc may head into the Gulf so, lots of easy salads will be needed if we lose electric eventlually.
