BLT Bread Salad for Magazine Monday

Before I tell you about this BLT bread salad, I'd like thank you to Pam for following my blog!

BLT Bread Salad for Magazine Monday - This is from the latest edition of Cooking Light Magazine.



It’s a deconstructed BLT……….wonderfully easy side salad with big return on flavor and aesthetically pleasing………. (on the first day)

Ingredients are simple! See below....

6 oz.French bread baguette, cut into ½ inch cubes
4 slices hickory smoked bacon
1 tablespoon olive oil
¼ cup red wine vinegar
¼ teaspoon freshly ground pepper
1/8 teaspoon salt
6 cups torn romaine lettuce
1 ½ pounds plum tomatoes, cut into ½ inch wedges
3 green onions, thinly sliced
½ cup (2 ounces) crumbled feta cheese


Preheat oven to 350 F ( 175 C)

Layer bread on baking sheet; coat with cooking spray. Bake at 350 for 18 minutes until toasted.

Cook bacon then remove from pan, reserving 1 tablespoon drippings. Cut bacon into little pieces. Stir oil into pan with drippings. Remove from heat. Stir in vinegar, pepper and salt.

Combine lettuce, tomatoes and onions in large bowl. Drizzle with vinaigrette. Add bread, toss well. Sprinkle with bacon and cheese and serve!


It was paired up with grilled Italian sausage and black beans and rice.



This was sooooo good. But there was some leftover and we had it the second night. No, no, no.....we didn't actually get any because my first bite was so bad, So Bad, that I actually spit it out in my bowl! Really! I hate to even admit this...what awful behavior...but I was not about to swallow that sour mess (Hey! No snickering!)

Seriously.....it is a wonderful salad to have fresh but it didn't serve us a second evening. Maybe it was the vinegar sitting around with everything but geez...

Is it a keeper? I don't know. I am on fence with it because it made a nice side salad with oomph....not just a boring green salad...if I can figure a way to make it for one night.

  1. I say have that and only that. Eat the whole bowl over the course of a day ;) ...pretty sure that's what I'd do...I love a BLT in any form!

  2. I like bread salad every once in awhile, but I tend to make single serving sizes since no one else will eat it! My hubby just shakes his head at the concept. :)

    Yeh, I know, almost a year - come next Saturday I'll have hours to email you and explain the heinous-nous (sp?) of my crime against the Internet ;o)

    Or of course there's always Skype!

  4. BLT salad sounds like a winner to me! Maybe you can mix half of it up for dinner and save the rest of the ingredients for the next day? Looks very pretty!

  5. Girlichef - Cripes, I never thought of that! It would make a nice lunch and nibble on abowl for dinner. Great idea.

    Janel - I don't have salad eaters here either. I mean, they will eat a salad but prefer other ways to ingest greens....and so I wanted to try a different sort of salad.

    Jo - I look forward to long emails :-) Never heard of Skype, whta is that?

    Kim - That may be my best bet. It did look pretty the first day, thaks for saying so!

  6. I can see the salad with dressing not being able to serve up a 2nd night but, i have no doubt that it tasted pretty good the 1st night. The bacon alone, made it sound delicious.

  8. seems like a nice salad, a great idea and I do like all of the ingredients so I could see liking it .... have make cornbread salad before and you have to eat it in one serving, at least that recipe....

  9. Hi Tina Marie - thanks for checking in on me - you're right I haven't posted for ages. I went to Europe for 6 weeks, and then you know how it is - was too busy getting organised to go away for a couple of weeks before that, and then busy catching up on things since I got back - all equals no blogging. But, as it happens, I did finally start drafting a post a couple of days ago, so hope to have that up by tomorrow - yay!

    This salad sounds great by the way - I would definitely scoff the lot in one day!
