Bourbon Chicken

Thank you to One Perfect Bite and Martha's Menagerie for following my blog!

Last week I tried fellow foodie Drick's Bourbon chicken. I wish I had followed his directions to the letter and used chicken leg or thigh meat instead of substituting breast meat. This was good...but would have been much better had I used the darker meat. You can check his site out HERE.



I used the following ingredients......

* 1 pound chicken breast, cut in bite size chunks
* 4 oz soy sauce
* 1/2 cup brown sugar
* 1/2 tsp. garlic powder
* 1 tsp. powdered ginger
* 2 tbs. dried minced onion
* 1/2 cup Jack Daniels Bourbon Whiskey
* 2 tbs. white wine

I mixed the marinade ingredients and tipped nit into a freezer bag with the chicken pieces. Cover and refrigerate overnight.

Bake chicken at 350 F for one hour, basting frequently...about every 15 minutes. Remove chicken.

Scrape pan juices with all the brown bits into saucepan. Heat, and add 2 Tbs. white wine. Stir and add chicken. Cook for 1 minute and serve over white rice.

Served also with Le Petit Francais..............



And a side of steamed green beans with bacon...and a glass of wine....



Will I make this again? Absolutely! But I will use chicken thighs instead.

There is a chain in our local mall food courts that sells Bourbon Chicken. My hubby usually doesn't like an alcohol flavored foods, but he loves that chicken!
