White bread 101 with grilled cheese

Another loaf of white bread. Not only is it pretty, it was put to use making a mean grilled cheese sandwich.




King Arthur Flour Baker’s Companion
is a fun book to peruse. Not only are there good recipes, there are tips and explanations throughout the book. For instance, what happens if you don’t use sugar and/or salt or if you add too much of either. Understanding the chemistry and the process of yeast and flour, the effects rainy weather has on the rising process.



In short, all stuff I never thought about before. The first recipe I started with was White Bread 101 as this is the foundation for many other breads in this book. Recipe may be found HERE

It made a great standup bread for grilled cheese.........




I’m thinking the recipes without potato flakes are better for our taste in white bread. It’s so moist and tastes great…but I am still on the hunt for the perfect white bread which will hold up to peanut butter. Now, don’t quit reading and don’t write this one off as a bad recipe. It’s good. I just need more firm bread for smearing that peanut butter.

  2. This looks like a good one...and I am a sucker for a grilled cheese sammich anytime! I tried a Basic White Bread recipe (but haven't had a chance to blog about it yet) that held up very well to pb. And my oldest son requested that I just make it every week from now on. I saw it at Natashya's place last month (it's under Basic White Bread in February's BYOB roundup!) . =)

  5. For a person who doesn't bake, especially bread, I still can relate with wanting the perfect bread for "buttering." But, then there's the thought of egg salad. I'm quite particular about which bread fulfills my need for an egg salad sandwich and when I look at yours (I actually think I can smell it too) I think to myself, That it! The perfect egg salad sandwich bread.

  9. I just did a King Arthur order...trying ot do more homemade bread baking. White bread still makes the best grilled cheese and PB&J. I noted in your first photo that you use Cafe Bustello, that's the only instant espresso my hubby likes ;)
