
This time, we traveled to Italy via this very old book - Cooking Without Frontiers. Review of this book may be found at Novel Meals.
Sogliole al marsala
Instructions and Ingredients.........
4 medium-sized soles, filleted
Flour
6 TB butter
Salt
1 cup Marsala wine
1 teaspoon finely chopped parsley
2 TB creamed butter
Lemon juice
Dust fillets carefully with flour. Heat butter in frying pan over moderate heat, add fillets and sprinkle with salt.
Cook until golden on one side, add Marsala and turn fillets and cook on other side.
Place in heated dish, set aside.
Mix parsley with creamed butter and lemon juice. Dot the fish with parsley butter and serve with a crisp salad.

This was a lovely meal and quick to get to the table. Definitely will be prepared again and is perfect for the nights you are tired and super busy. A snap to make, a delight to share over a glass of wine.
