Fast and Fabulous - Garlic, Sun-Dried Tomato and Olive Oil Spaghetti

It's a busy time of year and personally, I can't believe December crept up on us soooo fast! We are fortunate enough to have avoided the ice storms and snowy weather that has plagued so many people across the northern hemisphere. Don't hate me...can't help it we are having unseasonably warm weather here!

This brings me to the theme at I ♥ Cooking Club for this week. Fast and Fabulous - a good theme and plan for those busy evenings when you need supper on the table pronto. A hot bowl of pasta is always great.

I prepared Garlic, Chilli Sun-Dried Tomato and Olive Oil Spaghetti.



I don't know why I didn't think of having a "tiny wine" with my meal before. Perfect amount for a light meal. I missed having my husband home to share supper and when he's gone, I never think to open an entire bottle of wine as I usually have one glass (when he's away). These small bottles are great for that purpose.

Anyway, it was very good! I had to reheat it as my son called just as I was hauling everything outside. Could have said I will call you back but, it's always good to talk to him. The devil dogs (Shibas) did not wish to join me for dinner on the patio. Probably still looking for Doug.

My version of Garlic, Chilli and Olive Oil Spaghetti

Cooked the pasta, a breeze since I actually had some on hand that was cooked. Careful use of leftovers means saving money. I just had to shock it in boiling water.

In my small cast iron skillet I heated good quality olive oil then sautéed sliced garlic with sun-dried tomatoes. The chillis would be too tough on my tender stomach so I substituted something red and something I like. A little bit of parsley and a little bit of mozzarella cheese and I was ready for a bowl meal. Even if I had to cook the pasta this would be on the table in under 20 minutes.

  2. Sounds very good. Even winter tomatoes would probably work, as they develop a tiny bit of flavor when heated, but sun-dried tomatoes sound delicious.

  7. Aww, Tina you are a sweet lady for sure! I can understand why you put your dinner off to talk to Tristan and I think it's really sweet and speaks well of your marriage that you missed Doug at dinner time. This does look like a wonderful meal to pamper yourself with! Glad you found a mini bottle of wine for yourself.lol

    Love to read your post , feel warm when you talk about your family. Simple dish like this with a glass of wine is a wonderful meal to pamper yourself when home alone.

  15. Simple combinations work best sometimes. I too drop everything to talk to my son when he calls. All else can wait, except when I need to put the bread in the oven:-).
