Potluck is this week's theme at I ♥ Cooking Club. I present a perfect accompaniment to a patio meal - a rich ripe avocado with a warm bacon and tomato dressing.
As the hot bacony mixture oozes over the cool avocado your only thought is - why didn't we eat both avocados instead of splitting just the one? Yes, it's that good.
We served the avocado with steamed shrimp seasoned with Old Bay and a fruit salad. This screams of summer dining.
Here is the recipe from Nigel Slater's book Real Fast Food. It's so simple I thought you'd like proof right from the book!
I am loving this book almost as much as Kitchen Diaries. Some things are just so simple you wonder why they are in the book but my goodness, they are so easy and delicious. Winning combo.
Tomorrow is Wine Wednesday and I will be posting the perfect wine with this meal.
Check out the other Potluck offerings at IHCC. Enjoy!

ReplyDeleteSimple but it sounds sooo good! I would never think to pair bacon and tomato with avocado - that's why I need recipes for these sorts of dishes.
ReplyDeleteLove it!. Warm bacon and tomato dressing sounds really good to me. And perfect with the avocado. I like it that you've served with some shrimps too, my favourite! Yummy potluck!
ReplyDeleteOh my goodness - you're right this does absolutely scream of summer, and right now I would love to be sitting out on the deck on a balmy evening enjoying that meal.

ReplyDeleteThis looks fabulous. Real Fast Food is so great for when you just want something effortless to make that tastes wonderful--it's probably the Nigel book I go to first and use the most. ;-)
