I hope Sockeye Salmon is magic

Vacation is over. Has been over for a week and I can say that I ate too much, drank too much, spent too much and enjoyed every single second of it! Now it's time to eat a bit better, health wise that is. We usually eat healthy fare but we did overindulge with a few desserts and wine. And gin and tonics. And breakfast at Waffle House. Oh yeah.

Here is a meal that will do the trick to get my tummy in better shape. Sockeye Salmon is magic, right? If you eat grilled fish you'll be thin and feel great and I won't even need to exercise, right? Maybe that's something I read somewhere. Probably not though, probably wishful thinking ...LOL

If you have a grill pan (and I happen to have a very lovely Calphalon grill pan my sweet husband bought me years ago) then this will be easy-peasy. You simply brush olive oil on your fish, sprinkle on some thyme, salt and pepper and any other herb you want. Use sliced lemons for extra tang. Plus the lemons look cool.

This was excellent paired with buttery peas and a pearled couscous. Curtis Stone's recipe called for orzo but I had a craving for the pearled couscous.

    Judee - me too. But I know I need to get out walking in the morning before it heats up. C'mon Fall temperatures!

    Vicki - I don't buy farm raised salmon and maybe that makes a difference in taste. But if you don't like something, you just don't! Maybe it's the texture.

  5. Salmon is always a great idea, and as you demonstrate doesn't need to be complicated. I buy frozen filets and keep them in the freezer as an emergency dinner if I fail to get out to any markets. Your photos look good.

  7. This is my favorite way to cook salmon too. Put it on a cast iron grill on the stove top, the rest is magic!

  12. I adore salmon for an easy healthy dinner and this preparation looks simple and good--along with the side dishes.

    Funny, I did a Rick Bayless salmon recipe that included peas in the sauce this week. ;-)

  13. This is definitely the season for healthy, light and easier cooking. Not that my selection was any of the above (well maybe healthy), but at least it was the exception this week.

    Deb, it's not always easy to get the wild salmon here, so much farm raised. Will check out your Rick Bayless recipe.

  16. G&T and breakfast at the Waffle House, I'd have enjoyed this too. It's always good to cook healthy. Salmon is a good source for vitamins, good fatty acid and it's tasty.

    This is a gorgeous salmon dish and like you said, the lemons certainly look cool. Looks so flaky and delicious.

  20. I like teriyaki salmon, too, but the flavors you've chosen also work really well with salmon. It's hard beat salmon for a healthy, quick meal.
