Simple green salad with lovely lasagna

Getting back to a normal routine.  That's good for us, I like continuity and while we are both still working there is a certain rhythm to our routine that barely fluctuates.  Creatures of habit I suppose.  Having to deal with that mess with the storm seriously changed things for a bit.  I'm not complaining.  There are people just 45 miles west of us who still don't have power, who have gaps in the structure of their homes and worse.  Believe me, I have a great deal of empathy for them.

Well.  Getting back in the swing of things I stuck with non complicated meals, made this chicken lasagna ( recipe HERE) that I posted in August.  It's a tried and true meal.  To keep it simple we had a gussied up green salad with lots of cukes, shredded carrots, grape tomatoes, bib lettuce and mushrooms.

The plan was to enjoy the meal, drink some wine and watch the movie The Italian Job, the one with Mark Walhberg and Charlize Theron, not the very old version with Michael Caine.  We've seen both.  BUT after a conversation about movies with some coworkers earlier in the week we switched gears and watched Firefly.  We all got to talking about the quirky series which is a mixture of sci-fi and western.  Believe me, it works.  And who can't love Nathan Fillion?

Big news here....maybe I have mentioned it before.....Doug is set to retire by the end of the year.  He is slowly burning off some leave time and I will be taking some time here and there so we can enjoy a few convertible rides. In spite of the fact that he has drastically reduced the number of telescopes he owns, he may get back into astronomy again.  We will see how the night skies treat him, not to mention the cloudy nights we seem to have these parts.  Also hoping we can do some traveling in the near future.

Oh, speaking of traveling, a domestic trip to Nashville may be in the works for next year as Mark Knopfler will be on tour.  For the younger folks I suppose the band Dire Straits doesn't ring a bell.  We like his solo albums and frequently listen to him when we sit in the den.  Love his voice.

We missed Eric Clapton in NYC earlier this month and I think this would be our one and only opportunity to see Knopfler.  Our favorites are growing older, as we are too.  The CD Privateering is good.  I embedded  Don't Forget Your Hat, love that one, and if you want to give a listen, the song afterwards called Haul Away is excellent.  The pipes make me want to travel to Ireland.
 
That's about it for now. I'll take a picture of the field once it's cleaned up, share some recipes upcoming and hoping to bake some bread.

  1. So many possible fillings for lasagne! Our dinner tonight was lasagne with squash filling -- using the normal tomato sauce with lots of onion, the normal ricotta + egg and parmesan for one layer, and a cooked & cubed dumpling squash for the other layer. Flavors blended nicely. I bet your chicken lasagne was also great.

  2. Ha! Sometimes do you feel like you need to do footnotes for the "younger" crowd. (Sorry, that really made me sound like an old fart.) :) We saw Blues Travelers for the second time last year. They were doing a lot of sitting in between sets. :( Everyone's getting old but us! Take care getting back in the swing of things.

  4. So glad things are getting back to normal. Good luck on the retirement. Mr. BFR is semiretired and has managed to keep busy with all those projects he's always meant to do. I plan to work for 5-7 more years. Hope you get to the concert!!!

  7. Things always seem to take forever to get back to normal after a disaster. Glad you're getting there! We loved Firefly though to be honest I'm kind of glad it didn't have a second season. I heard a few rumors of things that were supposed to happen and I don't think I'd have wanted any of that to happen. Yay for retirement! If you get up this way (or are in Tylertown) we'll have to meet up!
