Nigella's Pizza, ready in 40 minutes - start to finish
{ooey, gooey hot lunch!}

Today I wanted to share a lunch that is easy to prepare and rather versitile, as far as toppings go that is.  It's from one of my favorite cooks, Nigella Lawson.  Most of the ingredients are probably in your pantry and fridge  All purpose flour, an egg, milk, cheese and toppings you enjoy on a regular pizza.

Her Crustless Pizza is more like a thick grilled cheese sandwich. It’s super easy and I had it out for a hot lunch in under 40 minutes. That is mostly hands off time as it bakes for 30 of those minutes.

Once you whisk the batter it is pouring into a pan and you can relax for 30 minutes while it bakes.

Nigella's Pizza

Ingredients

1 egg
2/3 cup all-purpose flour
Salt
1 cup whole milk
Butter, for pie dish
1 cup grated Cheddar
2 ounces small chorizo or pepperoni slices, tomato, mushrooms, whatever you like
I used a round ovenproof pie dish, 8 or 9 inches in diameter

Directions

Preheat the oven to 400 degrees F. In a small bowl, beat the egg with the flour, salt, to taste, and milk to make a smooth batter.

Butter a round ovenproof pie dish, then stir half the grated cheese into the batter, before pouring it into the dish.

Bake for 30 minutes. Take the dish out of the oven, sprinkle with the remaining cheese, and add the chorizo or pepperoni, if using, - or anything else - now, too. Return the dish to the oven and cook for another 2 or 3 minutes to make sure it's heated through.

Take it out of the oven and serve, cut into slices. Nigella suggests a green or tomato salad on the side. This turned out airy rather than pizza crust-like. It was good.

  1. Looks yummy! I've never had a crust like that so I'm going to try one with chorizo and one with ham, on different days of course :)

  3. I tried a version of this many years ago from another bloggers site. Although I can't classify it as pizza, I agree with you that it would make a great lunch. Maybe even lunch today! :)

    1. It's just so fast and minimal hands on time. I can whisk it then read while it bakes. Or lately stare blankly into the yard. Plus you get a hot lunch.

  8. Oh I love Nigella and this looks tasty! I enjoy pizza and prefer making my own crust but end up not making it because it can be a bit complicated but this looks super simple.

  12. Looks delicious! I'm going to send this recipe to my son in Maryland. Sounds much better than frozen pizza! Staring blankly into the yard sounds familiar, unfortunately. We're having nice weather for the holiday weekend, so we had dinner outside. (Takeout pizza for the first time since the shutdown, as it happens!)

    1. Laurie, we have tried frozen pizzas but they are never very good. This is so much better. We also had our first carry out pizza recently and set up a movie night. It was fun!

I made this one awhile back (I think after you pointed it out to me) and I have to say it is one of my all-time favorite Nigella recipes because it is so versatile and so practical. I love how you can make it with very little.
