Fajitas!

 This was the first time the Blackstone griddle was used to prepare fajitas and it was a hit.  The original "recipe" (which I haven't prepared in ages) is from Cooking Light. You can see that post HERE. This was very similar. Instead of green bell peppers we used only the yellow and orange this time. Also onions as they are an intregal part of the veggie mixture.



Red peppers would have been pretty, not sure why we didn't have any as it seems there are always red peppers in the fridge. 


 If you've ever made fajitas you'll know the basic ingredients -  just use the protein you'd prefer.


Doug used skirt steak and a Fajita seasoning mix with cumin, chili powder, garlic and salt.  Use small tortillas, heated on the griddle, and top with sour cream.


This is a great messy meal so grab lots of napkins.  I love messy "hand meals" such as fajitas, tacos and grilled wings.  Fun food.  Serve with sliced melon - that was a great combo.

  2. I love fajitas! They're a great meal for camping and I've used steak, chicken and shrimp. I found some prepackaged carnitas meat, which would also be good. I could eat Mexican food 2-3 times a week!

    1. Les, indeed it’s a versatile meal and one day we’ll use chicken. The skirt steak was very good. We plan to take this meal camping soon.

  3. Oh these look good! Fajitas are one of our favorite go-to meals. Do you make your own tortillas? They're kind of tedious but so so good! I bet you could even make them on the griddle.

    1. Katherine, I’ve never made my own tortillas but my sister-in-law does. She’s a great cook! One day I need to try that, loving the ease of a fajita meal.

    1. BFR - we use it all the time. Doug has made many good breakfasts and now fajitas and a smashburger. The 22 inch one works well for us but there is a smaller one, 17 inches. You will love it!

  5. We love fajitas and yours look delicious! One of the food blogs I follow posted a sheet pan recipe not too long ago that was pretty good. That surprised me.

    1. JoAnn, the sheet pan recipes are great. I made a Skinnytaste fajaita sheetpan a while back and it was good. Easy too.

    1. Jackie, I would like to try the air fryer feature in my oven. Haven't used that yet and I suppose I will start with chicken. Wouldn't want to overcook steak.

  7. The yellow peppers are also pretty, but it is funny, the red ones always get my attention at the market. Fajitas are a fav around here.

  10. i must be weird; i really hate having to use my hands to eat. i reckon that's why we invented cutlery! :-) But your fajitas look great.
