Quiche makes for an easy lunch

So….we are still working with a soft diet due to the healing process after oral surgery. It’s one thing when you want to eat meatloaf and quiche but quite another when you have to. Funny thing that, how you want something more than ever if you just can’t have it. Right now I think Doug is wanting pizza and steak and maybe even nachos. Ok, baked nachos was my idea but still….he likes them too.



This quiche is a simple little meal to toss together but better for a lunch than a dinner. In my opinion. Somehow it’s satisfying for a lunch but you need more to keep your stomach from growling with your main meal.



You’ll need a pie crust and if you are as lazy as I am, you’ll use Pillsbury’s premade pie crust. Preheat oven to 375 F.

Crack 6 or 7 eggs into a bowl and add 1 ½ cups of milk (or a mixture of milk and cream). Add some salt and pepper and a spice or herb you like. Maybe some paprika. Beat well by hand or toss into a blender.

Now you can get creative and place your favorites in the bottom of the pie crust. Spinach, bacon, cheese….whatever you fancy. I used green scallions, sautéed onion, cheddar cheese and roughly 8 ounces of cubed ham. Once you have your ingredients in the pie shell, gently pour the egg mixture over the lot.

Bake 45 minutes. Easy, right? You can mix it up by making it vegetarian, or using a swiss or mozzarella cheese.



In about 2 ½ weeks you’ll see me posting something crunchy…like nachos.

  1. Isn't that the way it always is? We want what we can't have. I hope the surgery mend is on the downhill side now and soon you can post about those nachos.

  4. Oh my, that looks so tasty. I haven't had quiche since I stopped eating cheese. you have me wanting to try making one with almond milk and non-dairy cheese. ok, maybe bacon as well. Thanks for the visual nudge.

  7. Oh my poor Doug. It won't be long before he'll be chomping on some grilled steak, I bet, lol...How aboutyou and those tests???

    I haven't had quiche in a long time. Yours makes me want it right now but of course, my "new" diet doesn't allow it which makes me want it even more, lol...I have a feeling the same thing is going on with you and just a whiff of Wine:)
