Weekly Meal Planning #4 featuring Chicken Mozzarella Pasta and Beef Stew

Tuesday: Cook's Illustrated Beef Stew

Thursday: Grilled Ribeye Steak with mashed potatoes and steamed broccoli. We ate on the patio as the weather was fairly nice and I neglected to get a photo :-(

As promised, here is the recipe for the Chicken Mozzarella pasta dish below. It's a definite keeper and will be making the meal rotation list.

Chicken Mozzarella Pasta recipe.

Chop chicken breast up in small pieces and brown in skillet. Season with salt and pepper.

Remove chicken and toss in chopped onions and garlic. Next time I will add mushroom.

Add jarred pasta sauce and some herbs, then toss in chicken. The recipe in the cookbook Dinnertime neglects to tell you to toss the chicken at this point but the PW website does state to place it in the sauce now.

After a few minutes, stirring as the sauce heats, you will add 8 ounces of cubed mozzarella. It has to be a block of mozzarella and cubed pieces. If you use shredded it won't turn out the same. I imagine it will be good but this way you get the ooey bits of melting mozzarella chunks in the sauce.

While that was going on you can cook your pasta and plate it. Use Parmesan cheese liberally.

So far I have managed this list for 4 weeks. Let's see if I can keep going!! What has been on your meal plan for the week?

  1. That mozzarella pasta is on my list of meals to cook up soon. It looks delicious! And since you tempted me into buying the cookbook I have the recipe! The Beef Stew also sounds tasty. I haven't made stew in awhile and so I'll have to look for it. It sounds like you've been eating very well! For all the cooking I've done for the Christmas holidays I haven't done much meal cooking. I'm trying to get back in the habit this week.

  4. I have planned this week - and made my own special fried rice for the first time yesterday ... it was delicious.
    Today is so cold and miserable that I am making my nana's cawl - with skirt of beef as shin / shoulder of mutton were unavailable.

    I also found an interesting new baked ham recipe - can you buy ginger beer?
