Cassoulet the Vegetarian way!

We certainly love sitting on the patio and enjoying a good meal with wine. The weather had cooperated and we moved out there right away.

This recipe for cassoulet may seem unusual as it doesn't have any meat. That's right, a recipe considered a meat-fest and prepared all sorts of ways in France has been adapted for vegetarians. I guarantee you, everyone will love this rich stew. It's become one of our favorites. I'll post the recipe at the end, it's super simple to put together and the slow cooker does all the work. Winner!!

Mix up all the ingredients in a slow cooker. Just give it a gentle stir. By the way, this called for sun dried tomatoes and the smoked ones are amazing. Highly recommended.

It wasn't until we shopped at Publix and were browsing in the fresh produce section that we realized we could get the veggie sausages the recipe calls for. More like fat Italian sausages with basil and garlic.

So, when I made this, I just added these breakfast "sausages".  They were good but I'll bet the others are better.  Next time.

And here you have it. A big bowl of protein in the form of beans and veggies and delicious juices that need mopping up with a good fresh bread.

  2. I've made a cassoulet a time or two and have always enjoyed them! Not sure if I'd go full vegetarian (J is not a fan of veggie sausages) but I love the idea of using sausage in general. There are so many great artisan choices. I've been thinking of you with all the Hurricane Matthew craziness. Hope all is well!

    Katherine, Thanks for the good wishes. We are further west and so all we are getting are heavy breezes and clouds. I feel bad for those who have lost electricity and their homes. Also, this recipe can be adapted and I tink you will love it!

  4. I like the idea of this a lot! The ingredients look great, whether vegetarian or meat sausages. I love using the slow cooker to help make dinnertime easier. Plus, when the main dish is taken care of, I'm more inclined to bake bread.

  9. I read recipes like this and think I've got to get a slow cooker and usually just make cassoulet in my Dutch oven. Don't know where I'd stash another appliance.

  11. Thanks all! Yes, a slow cooker is a definite time saver and does the workload.

    Carole, the vegetarian sausage has the texture but allows us to limit animal fat while we are getting heart healthy right now.
    Planning on going into retirement in the best shape we can!

  12. I love cassoulets and love the idea of a vegetarian one. I really like Field Roast brand vegan sausages too--I find them at Whole Foods and they have a great variety and good texture.
