Mongolian Beef and Broccoli

 This week I am revisiting the SkinnyTaste cookbook before the library wants the copy back.  So far we have liked all recipes we have tried with the exception of a chili mac dish.   Mongolian beef and broccoli was next on the list to try.



The recipe may be found HERE.  It's meant to be a serving for four people and I think we will get two dinners out of it.  I just need to steam and sautee more broccoli as we ate so much of it the first night.



Notes: Cutting the beef into thin slices made it more tender (for some reason) than the thicker slices.  I did a little of each to experiment.  Thin works best.  
Also, fresh ginger is definitely needed and the aroma when you add it is quite noticeable.

  2. I definitely need to pull my copy of this book off the shelf. I'm not sure I ever used it! I made our version of chicken fried rice for dinner tonight so similar theme!

  4. Looking at the recipe reminded me I hadn't bought cauliflower rice in a while. I do have a big head of cauliflower right now, perhaps I should make my own?

    1. Jackie, well this recipe would need rice as a side dish in my opinion and if you make cauliflower rice, yes absolutely!! This can be gluten free but using tamari instead of soy sauce.

  5. I had a meal of beef and broccoli years ago that I have been trying to replicate ever since. Maybe this is the recipe that would be the one!

  6. Oh my gosh, I do the same thing when I have a cookbook overdue at the library -- make a ton of recipes out of it! Or in once case, I photocopied the pages I was most interested in (shhhh don't tell! :)). This looks yummy!

    1. Cecilia, I used to do the same when I was working and had access to a copier. Now I hustle through or keep checking the book out. I may purchase this one though.

  8. This is going on my meal plan this week. I may have made this recipe before; can't remember. So funny, because (as I said on IG), I made three Skinnytaste meals this week. The recipes are sooooo reliable.
