Tequilla Lime Chicken


See the photo below? You can imagine this is a summery meal, a patio meal, if it starts out with tequila and limes.

It's super easy to make. Slice open the limes and squeeze the juice into a food processor or blender. Add the tequila, olive oil, salt, garlic, jalapenos and cilantro. Blend the mixture until totally combined.

Add the chicken to a large plastic bag and pour in the lime-tequila mixture. Seal the bag and marinate in the fridge for several hours or overnight. I left it overnight.

Remove the chicken from the bag and grill it over medium-high heat. For starters I did not use breast meat. Yeah, I know that's what the recipe calls for but we just don't like it. We like thighs so I used boneless thighs.

I wasn't successful with the asethetic appeal of my dish but it did taste good.

  1. I can pretty much guarantee my meal won't come out as pretty as the Pioneer Woman's! Plating is just not my thing though I really wish it was. This sounds good and summery and relatively simple which is all a win. I'll definitely have to give this one a try. Thanks for sharing!

  2. I love all those flavors, so this sounds yummy! And - I think chicken thighs are the most underrated part of the bird....we love them in our house as well!

    I love chicken marinated and then grilled. A big favorite around here. And lime? I could almost live on lime chicken. Looks wonderful.

  5. I'm a horrible food photographer! Regardless, the chicken sounds awesome and easy. I'm all for grilling. I like the breast meat, but husband prefers the dark, so I usually grill up a selection.

  6. Your "nailed it" comment made me laugh. I have way too many food pictures that definitely fit that description. Though I have to admit...give me tequila and limes and I'll just make a margarita and forget the rest. ;)

    And my food pics NEVER come out looking like the professional ones! lol My meals tend to focus on flavor not look - ha ha
