Goodbye Turkey. Let's have Oven Roasted BBQ Chicken

I have become quite a fan of Ree Drummond's latest cookbook Dinnertime. Still haven't made the purchase but the library loan time is extended this time of year - yea! I was chatting with my bookish friend Katherine about this cookbook and let her know Costco has it for $17.

Here's the rub - it's Costco at this time of year - which means loads of crowds, yuck! It may be worth elbowing a few folks to get a bargain. Maybe.

Anyhow, here is another winning recipe from The Pioneer Woman we tried. Served with some alfredo sauced noodles and lots of blue lake green beans and you have yourself a feast.

Oven Roasted BBQ Chicken
From Pioneer Woman

Ingredients
3 cups Your Favorite BBQ Sauce
1/2 cup Peach Preserves
1 clove Garlic
Hot Sauce, Optional
12 whole Chicken Thighs, Bone-in, Skin-on
Olive Oil For Brushing

Instructions: Combine BBQ sauce, peach preserves, garlic, and hot sauce in a medium saucepan and heat over medium heat for 5-10 minutes, or until nice and hot. Set aside.

Preheat oven to 400 Degrees F. Drizzle olive oil on 2 rimmed baking sheets and place chicken thighs skin side down in the pans. Roast for 25 minutes.
Remove from oven briefly, brush sauce all over the thighs, then use a spatula to flip them over to the other side, being careful not to tear the skin.
Brush the tops with more sauce and return to the oven for 7 minutes.

Remove from oven, brush on more sauce, and return to the oven for another 7 minutes. Remove from oven, brush on sauce, and turn up the temperature to 425 degrees. Continue roasting for another 5 to 7 minutes, or until the sauce is starting to brown around the edges and the thighs are totally cooked through.

Remove from the oven and let sit for at least 10 minutes before serving.

  1. And I bought it last week! I had to pretend I wasn't aware that the book was there and when I saw it I picked it up and was like "Oh look I've been wanting this cookbook and it's such a great price!" Completely and totally your fault! We went on Friday night and the crowds really weren't that bad. I normally avoid Costco like the plague on weekends especially this time of year because those crowds make me stabby. This sounds amazing! I love BBQ chicken and I like the idea of having the alfredo sauced noodles with it.

  2. I've been a follow of Ree for years. I couldn't pick just one recipe as a favorite, I love so many of them. My daughter in law does too and even though they are vegans, she adapts the recipes to fit their needs. Love her show!

  3. But Katherine, it's totally worth it because it's a great book! (Hugs ) I can't wait to hear what you make from this cookbook. Costco is crazy on the weekends so going on Friday was a good call!

    Vicki, I can look through her site and browse her books and never tire of the stories & recipes. They sure are easily adaptable recipes.

  4. Call it jealousy or proximity or not being a fan AT ALL of her TV show, Ree has lost her appeal to me. I do have the first cookbook and this recipe does sound easy and delicious, so maybe I need to reevaluate! :)

  6. This recipe looks good and easy. My husband loves chicken thighs. I have a love/hate relationship with the Pioneer Woman's recipes. They are usually tasty and easy, but more often than not they don't quite fit the way we eat on an everyday basis. I haven't seen this book yet ... I'll have to see if the library has an available copy.

    1. I totally get you on the love/hate thing. Too much cream and butter but sometimes it's just the ticket. Plus you can adapt recipes.

    1. It was fairly easy but yeah, some recipes are better for the weekends. I can't wait for this next one because then we are off for a week afterwards!
