
This is a Curtis Stone recipe that is easy to prepare. Doug grilled the salmon and I worked on the orzo and spinach portion. The feta cheese really enhances the flavor of the spinach and tomatoes. It was good.

The recipe may be found HERE at Curtis Stone's website. Now, the recipe for the Mai Tai is as follows:
Mai Tai
1 shot each of two rums. (Appletones and Anjeo)
1/2 oz. Cointrau
1/2 oz. Orgeat
1/4 oz. Simple Syrup
Pour it over ice and add a little umbrella if you want to jazz it up.

Yum! I'll pass on the salmon but the orzo spinach salad looks delicious. Hope you're feeling better and glad you were able to be well fed while you were recuperating!

Good to hear you're feeling better, and what a guy, stepping up to the plate like that :) I keep a bit of feta on hand to perk up the odd salad or two, but haven't tried it with spinach as yet. Looks good.

Tina- Hope you're are feeling back to yourself and doing well. This dish always catches my eye when I'm paging through his cookbook. It's so fresh and colorful and I love all the flavors. I know it was delicious!
