Chicken Stew
(adapted from Jamie's Food Revolution by Jamie Oliver)
3 sprigs of fresh thyme
1 pound diced chicken
2 cups white wine
2 cups chicken broth 2 stalks celery ( I didn’t have any so I used was in the fridge - mushrooms!)
1 large onion
2 carrots
olive oil 1 heaped tablespoon all-purpose flour
salt and freshly ground black pepper

Chop mushrooms, peel and chunk the carrots and slice onion.
Sauté in large pot on a medium heat using a few shots of olive oil. This takes approximately 10 minutes. I had rice so that went into the pot too.
Add chicken and flour. Pour in wine and broth, stir gently. Season with salt and pepper.
Simmer slowly and add more seasonings per your taste. I added roasted garlic powder and it was a nice addition.

Hey Tina! Funny enough, as hot as it is I have been craving a thick stew or chowder just like this (in fact I sweated it out over the stove making corn chowder the other day). We crave what we crave.

Super delicious way to use what's in the house! Funny, but we had both stew and soup this week ... I guess despite the heat, a hearty dinner is still welcome. :)

ReplyDeleteKim, absolutely, a margarita is in order for this meal! I like corn chowder, it doesn't matter to me if it's hot as long as I get a hearty meal.
BFR - Stew or soup is always a great meal. Especially with homemade bread.
I have the same intentions every week:) I am now craving enchiladas. Glad you were able to use your leftovers.

I love the idea of using up leftovers like this and am trying to be a bit better about making use of leftovers or the bits and pieces that I always have left over from meals. I've gotten better about not being quite so recipe/meal plan rigid and this looks like a good one to have on hand. Though I'm weirdly seasonal about food. Soup and meatloaf and roasts are only for October through April. Not quite sure why that is but it is a fact in my head.
