This...was absolutely delicious. I would like to thank Van at Yes, We Cook for posting such a simple, low calorie, delicious pasta dish.
On one particular fat filled day (blame it on all the holiday goodies and luncheons in which we've been partaking), we needed something light with veggies.
We chopped up some fat scallions, fresh tomatoes, a few sun dried tomatoes, shitake and white mushrooms.
On our last trip to the market the shitake mushrooms were particularly nice looking....
Alrighty....the bacon was beckoning and it is maple bacon, so I snipped a few slices of it in the pan too. Tip a tiny bit of olive oil in also.
Let the mixture soften without getting mushy...just about 4 minutes....
A cold glass of white wine was good pairing. I love pasta and this one was a hit....

A little bacon makes just about everything taste better, don't you think? This does sound like a nice, light recipe though.

I've also come to the conclusion the dish is really enjoyable as leftovers (if you have any, that is!)

Velva - I do wonder why it's tradition for people to bring so many sweets to work during this season. How about a fruit salad once in awhile...that's what I'm thinking.
