Van's Pasta and Sauteed Vegetables

This...was absolutely delicious. I would like to thank Van at Yes, We Cook for posting such a simple, low calorie, delicious pasta dish.

On one particular fat filled day (blame it on all the holiday goodies and luncheons in which we've been partaking), we needed something light with veggies.

We chopped up some fat scallions, fresh tomatoes, a few sun dried tomatoes, shitake and white mushrooms.

On our last trip to the market the shitake mushrooms were particularly nice looking....

Alrighty....the bacon was beckoning and it is maple bacon, so I snipped a few slices of it in the pan too. Tip a tiny bit of olive oil in also.

Let the mixture soften without getting mushy...just about 4 minutes....

A cold glass of white wine was good pairing. I love pasta and this one was a hit....

You can find Van's recipe here. I highly recommend it. Mmmmmmm...mmmmmmmmm

  1. A little bacon makes just about everything taste better, don't you think? This does sound like a nice, light recipe though.

  2. I can see why this pasta dish was a hit. Fast, healthy and delicious. Looks really good. We need more healthy meals to eat before we really indulge over the holidays. :-)

  3. YAY!

I'm so happy you enjoyed it, and the addition of the shitake mushrooms are perfect for the dish.

I've also come to the conclusion the dish is really enjoyable as leftovers (if you have any, that is!)

    =)

  5. Very nice, fresh, light and looking very tasty - loving the use of scallions (or as I call them shibbons - it's the Welsh in me!!) First snow forecast for this Thursday, might need something a little heavier!!

I agree with you all - bacon makes everything better!

Velva - I do wonder why it's tradition for people to bring so many sweets to work during this season. How about a fruit salad once in awhile...that's what I'm thinking.

Van - no leftovers at all. It was great and we plan to have it on a regular basis. I am so glad you posted that one.

Laquet - shibbons..I never heard that before. You teach me new stuff...Snow huh...yeah, I'd have something heavier on the side.

Kim - Definitely let me know when you make the fajitas. I am a big pasta fan.

    Natsahya - Me too!

Wandering Coyote - I've been loving the cookie recipes you have been posting. We ought to trade dishes.

Karine - thank you! And thanks for stopping by :-)
