Jamie Oliver and Roast Chicken with Lemon and Rosemary Potatoes

For Christmas my boss gave me a kick ass cookbook - Jamie Oliver's Essential Family cookbook: Jamie's Dinners.

I love just thumbing through a cookbook and this one is a real treat. Awhile back I asked Natalie (who is a big Jamie fan) which her favorite Jamie book was....well, this one is mine.... So far :-)

We ended up getting several meals from this so ...here is part one.



You'll need the following..........

4 pound chicken
salt and pepper
4 pounds potatoes (I used less)
1 unwaxed lemon
1 entire garlic, broken into cloves
handful of fresh thyme (I had to use dried thyme)
olive oil
rosemary
optional: bacon


Chunk up some potatoes, take one lemon and cloves of garlic.....



Boil the potato, lemon and garlic for 12 minutes.....



Drain and let the steam waft up over the mix for 1 minute.......



Scatter the potatoes in the pan....saving the garlic and lemon for the chicken.....



Stab the lemon about 10 times....insert into chicken along with those boiled garlic cloves........truss the legs, salt and pepper the bird and cover with bacon. Roast at 375 degrees.



As it roasts the bacon and chicken juices will coat the potatoes to make them golden and crisp..........Roast 45 minutes and then slosh the juices all over the potatoes. Return to oven for another 45 minutes to one hour.



These may have been the best potatoes I've ever had!



Served with a DaVinci Chianti......



A good start with this cookbook.....We also made soup and a chicken pot pie from leftovers. Three meals total!



Hopefully I will be able to get online tomorrow to post the pot pie. The internet connection is iffy at best. How I miss Alltel and our service with them...

  1. I love this, and bacon on top of roasted meat is a GREAT thing...

    But I gotta ask...

    Did you ever remove the sticky tag from the lemon? I've done that, even zested it a time or two (well, only zested it once). Loved seeing those photos

  4. Those potatoes do sound fabulous! I've never thought of boiling them with lemon and garlic before roasting them.

    Looks like some tired doggies there!

  11. you are so right, roasted chicken is comfort food and this way sounds wonderfull ... as for the sticker, have never ate one but they are suppose to be safe...let me know how they taste...
