Chicken and Guacamole Tostadas and Guest Hosting for me (Next Week)

Now, to the food................



Do you like it easy? Do you like chicken? How about avocados? Here is a No-Cook Meal, 20 minutes from prep-to-the-table, featuring all of the aforementioned. Chicken and Guacamole Tostadas are featured for Magazine Monday.


This one comes from the August 2010 issue of Cooking Light. Yes, I splurged on a magazine! Recipe is at the end………………….



Ingredients

1 ripe peeled avocado
1 cup plus 2 Tablespoons finely chopped tomato
3 tablespoons minced fresh onion
3 tablespoons fresh lime juice
½ teaspoon salt
1 clove of garlic minced
1 tablespoon chopped cilantro
2 cups shredded skinless rotisserie chicken
¼ cups smoked paprika
8 (6 inch) tostada shells

Place avocado in small bowl; mash with a fork. Stir in 2 TB tomato, 1 TB onion, 1 TB juice, ¼ teaspoon salt and garlic.

Combine remaining 1 cup tomato, 2 TB onion, 1 TB lime juice, ¼ teaspoon salt and cilantro. Toss well.



Combine chicken, remaining TB juice and paprika; toss well to combine. Spread about 1 TB guacamole over each tostada shell. Top with chicken mixture and about 2 TB salsa.



The smoked paprika can give the chicken a grill-like flavor. Serve with lime wedges and enjoy!



Because this is a natural real food kinda meal..... I think it fits the theme for Two-for-Tuesdays...........fruit, roasted chicken, an icy glass of tea and lime..............

  10. Mmm, nothing better than a quick meal, any time. I get so much mileage out of smoked paprika, don't you? It's one of the few spices that I manage to use up before it goes stale. Thank you for sharing at Two for Tuesday. And congrats on your guest post, can't wait to read it.
