Beef and Cheese Noodle Bake paired with Bloody Caesars......Mmmmmm

I ran across a recipe which is fast, easy, incredibly flavorful and...inexpensive. Now how could you go wrong with that combo?




This Beef Noodle Bake comes from Marie of The English Kitchen. Her original recipe may be found HERE A shout out to my friend Marie - this is most certainly a new favorite in our kitchen. It is described as deconstructed lasagna - perfect label for this.

Doug made Bloody Caesars for our evening beverage - good combination of flavors!



Modified Beef and Noodle Bake

Lean ground steak (1 pound)
Fresh or canned chopped tomatoes in tomato juice with basil and onions(about 2 cups)
a pinch of sugar
pinch of garlic powder
salt and freshly ground black pepper
1/2 cup of sour cream
1 1/2 cups cottage cheese
8 ounces of penne pasta (Marie used wide flat noodles)
1 cup grated sharp cheddar cheese

Preheat the oven to 350 F. Grease a square baking dish, I used a 10 ounce glass dish.

Heat a large skillet and cook ground beef.

Add the tomatoes and sugar. Season to taste with garlic powder, salt and pepper. Cook the noodles then drain and rinse with cold water. Drain them well!

Stir together the sour cream, cottage cheese, salt and pepper, then fold the noodles into the sour cream mixture.

Layer half the noodles in the baking dish, follow with half the meat and tomato mixture then sprinkle with half the cheese. Repeat layers with the rest of your ingredients.

Bake for 30 minutes..............ooooeey gooey cheese and the aroma is killer. But you have to let it sit for 5 or 10 minutes or it won't come out of the dish well. And you'll burn your mouth.

We modified it a tad. Doug muddled the basil (fresh picked from our garden) into lime juice. He did not add Tabasco. And of course, we used Russian Standard Vodka. So. Good. I asked for a second. Yes I did :-)

  7. Ok ... being a bit thick - what's clamato? And isn't a Caesar a Bloody Mary? I do something similar with tagliatelle and a cheeses sauce - need to try it with the cottage cheese mixture, sounds SO easy!
