Dick Clark’s Corn Fritters by Rachael Ray and an American Bandstand Story

Dick Clark’s Corn Fritters (from a Rachael Ray Magazine)

Now I have a mental picture of those two, chatting at a party, two completely different souls with no commonality in conversation. Huh.



The impression I have of Dick Clark goes waaaay back to when he hosted American Bandstand in Philadelphia. Must have been in the early 1960s. My big sister was able to go to Philly and dance on the show. She was so excited and of course my mom was uber excited for her. Linda on TV!! And Linda loved to dance. She left brimming with excitement, full of expectation and happiness. She returned so disappointed.

The kids`were able to dance and yes, Linda was on television, but when the cameras were off Dick Clark turned into an screaming ogre, yelling at the teenagers to line up and GET OFF THE DANCE FLOOR, and blah blah blah....

Yep, the image of Bandstand and Dick Clark...all of it, shattered Linda and she never watched it again. She was hugely disappointed and that remains with me to this day.

OK, on to yummy and non-yelling party food!!

They look like little pancakes, don't you think?




Ingredients you probably have handy right now!

One 15-ounce can creamed corn
4 large eggs
1 cup frozen corn, thawed
2 tablespoons sugar
Salt and pepper
½ cup flour
Cooking spray
Unsalted butter, melted, for serving

These don't take very much time at all to toss together or cook.

In medium bowl, combine the creamed corn, eggs, frozen corn and sugar; season with salt and pepper.

Sprinkle in the flour gradually, whisking constantly to avoid lumps. Spray a large non-stick skillet with cooking spray or use a tefloned pan. Drop tablespoons full of corn mixture to form small pancakes.

Cook until lightly browned on both sides. Serve with melted butter.

  1. I never watched Dick Clark. I was more of a Where the Action Is kinda gal. Do you remember that show, Tina???

    I sure was fooled by those Corn Fritters. They look YUMMY!!!

  2. Oh my gosh, no way! I always look forward to New Year's rockin' eve...now I'll never look at him the same way. That's too bad for you sister. These corn fritters, however look pretty awesome!

  3. funny story... I remember vaguely traveling to Montgomery (from Greenville at the time) for my brother and sister to be on the Howdy Doody show... 'bout the only thing I remember is our weekly trip to the bakery after taping.... so what does that tell ya???

  4. And we thought they were the good ol' days. I have never tasted of made corn fritters, but now These are something I will be trying; bet that would be tasty with a bit of maple syrup.

  5. They look good - I make similar but savoury with peppers and bacon and serve with a hot, raw salsa. But I love the whole sweet and savoury thing *slurp*
