National Shrimp Scampi Day

First off, thank you to g-Stanley for becoming a follower of my site!

Shrimp Scampi has it's own day, did you know that?

I didn't know about this until I stopped by Food Stories and saw the list of upcoming commemorations regarding food. I don't know who started this national shrimp scampi day but I am totally supportive.

Nothing like a fat shrimp/prawn slathered in garlic and butter (and a little white wine) for the makings of a good dinner.

This simple meal requires a scant six ingredients:

shrimp, garlic, sea salt, butter, parsley and white wine. (I rebelliously added sliced mushrooms) Add pasta and bread. And some Chardonnay....just to round out the meal.

Here is the breakdown of measurements:

1 pound shrimp (peeled and deveined)
4 TB unsalted butter
1/4 tsp. salt (and 1/4 tsp. freshly ground pepper if you'd like)
5 cloves of garlic, minced
2 TB minced parsley

Melt the butter, saute all but the shrimp until garlic is soft. Add shrimp (I also added thinly sliced mushrooms) and cook until done. I tipped just a tad of Chardonnay in that saucepan too. Couldn't hurt, that's what I thought.

We prepared a vat of pasta for the scampi to rest on. Slice that French loaf, pour a glass of wine and enjoy.

Life is too short - if you have a "bucket list" of meals you'd like to try I say go for it.

Happy National Shrimp Scampi Day!
