Derek's Breakfast Burrito - served for dinner

So…what is the connection with a breakfast burrito and Derek Stillwater? (and who is this Stillwater guy, you are probably wondering)

Derek Stillwater is a fictional character created by author Mark Terry. Derek’s character is a Special Forces veteran of the first Gulf War and a leading expert on germ warfare (with a doctorate in biological and chemical weapons.) He is also a top operative for the newly formed Department of Homeland Security. This humble breakfast/dinner was inspired by the book The Valley of Shadows and my review may be found at Novel Meals.

*This benign unexciting meal is no reflection on the fast paced novel.




There weren't many mentions of food in the book. After a dramatic escape from a fire (despite being tied to a chair as the place burned around him) he hooked up with his former partners and wolfed down a breakfast burrito. Not exciting fare but hey, it was a moment of simplicity as he ate a common ordinary breakfast within hours of having a life threatening experience, escaping being burned alive.

You can mix up so many ingredients, adding cheese, green onion, artichoke, bell peppers...so many choices. Mix it up as you like it. Here's what we did.

Humble ingredients......

½ tablespoon butter
1 cup sliced mushrooms
4 large eggs, beaten with a pinch of salt and black pepper
2 scallions, sliced thin
a small handful of mozzarella cheese
small flour tortillas

We served ours up with cheese grits....in a quiet atmosphere.



If it weren't for the bacon this could have been a Meatless Monday candidate!

  3. humble ingredients is the complexity of creating good foods... love a burrito bursting with flavors - Fall? I think it occurs a couple of weeks right before Christmas....
