Chicken Gnocchi Soup

How much do I love my slow cooker? Quite a bit but I haven't been making great use of it until recently. It does all the work while I am absent from the kitchen. This was made last week prior to Hurricane Hermine's visit.

This is a rich soup and one that we enjoyed prior to dinner. Next time I make it I will be changing out the broth (vegetable instead of chicken) and leaving the chicken out completely. More veggies instead.

The only bummer is cleaning out the crock once you are done. But, I have found a way to make it easy. Did you know a dryer sheet soaked in the hot soapy water will scrub this out as if it's Teflon? It's true. Once you have that crock in hot water let a dryer sheet sit in there for a few minutes. It's wipes the baked on food out fairly well.

Chicken Gnocchi Soup made in a slow cooker

Ingredients
1 pound of skinless chicken breasts (I used leftover roasted chicken)
1 large onion, chopped
2 carrots, peeled and sliced
A few sticks of celery, chopped
4 cups chicken stock or vegetable stock
Basil, thyme, oregano and whatever you like, per your taste
1 cup milk
2 tablespoons cornstarch (mix in with a small amount of water so it doesn’t clump)
1 16-ounce package of potato gnocchi
5 cloves garlic, finely chopped
A handful of fresh spinach
salt and pepper

Instructions
Place the chicken, onion, carrots, celery, stock and herbs in the crockpot and cook on low for six hours (or high for four).

Shred the chicken in the pot, then stir in the milk, cornstarch mixed with water and gnocchi.

While that is stewing again, heat a bit of oil in a frying pan and saute the garlic. Add the spinach to the pan and cook until wilted (a couple of minutes). Add the spinach and garlic to the crock-pot. Salt and pepper liberally.

  1. Wow, that looks delicious! Your recipe is just in time, too... I'll be getting back to my weekly soups very soon. Also, have you seen slow cooker liners at your grocery store? They look like giant baggies and make crockpot clean up so easy. I'll have to try them one of these days.

  2. Wow Yummmy! It's almost soup time.I have taken to using those crock liners, though I'm suspicious of the plastic. I'm going to try your trick next time. I hate cleaning the crock insert! Yes, more veggies, less meat. Usually a good choice.

  4. I need to rock my crockpot more often. I go in spurts with it. Each time I use it, I am reminded how much time it saves me. Your chicken gnocchi soup looks soulful and delicious. It will be interesting to see when you remove the chicken and the broth and transform it to vegetable gnocchi-that should be really good too.

    Love, love the dryer sheet idea. I will remember this one.

    Dryer sheets - great idea. I use the used sheets to clean the gunk out of my sink.

  8. This looks delicious! Would you believe I've never had gnocchi? I really want to try it and this looks like a good way to experiment. Have you tried slow cooker liners? They're like thin plastic bags that cover the inside of the crockpot and when you're done you just pick it up, throw it away, and wipe out the inside of the slowcooker! I don't use them all the time but when it's something I know is going to be super messy is fantastic! I will also have to try the dryer sheet!

  9. I love this kind of soup but the only time I ever have it is when I go to Olive Garden.

    I've always used Reynolds Slow Cooker Liners in my crock pot. Just throw the liner away when done and wipe the cp out.

  11. Your soup sounds really good. Not quite the weather here yet, but soon. I don't use a slow cooker, but the dryer sheet idea would probably work for other hard to clean pot jobs. Thanks

  15. Boy that soup looks good-it is still too warm here for soup however once we get cool weather this is going to be one of the first ones I make.

  16. This does look like a hearty and delicious soup--perfect for an approaching storm. I like the idea of adding more veggies and doing a vegetarian version. I am glad everything turned out OK with Hermine although you guys definitely got hit more than we did with our Lester.
