Bacon, egg and cheese on a toasted English muffin

Who hasn't been glued to the news these past few days?  It's times like this I wish we could tune in to televison news, I guess. Refreshing the news sites on our tablets is enough. I thought 2020 was bad and was happy to see the back of it, but this year.... 

My plan was to make something from one of the I Heart Cooking Clubs featured chefs and join in but I have been completely distracted and unorganized. Therefore, I will share a new addiction. The breakfast sandwich made with toasted English muffin, bacon, cheese and an over easy egg. 

We probably have this more often than we should.



If you've ever had one from McDonalds and liked it you will love this version. Bacon is ok in moderation, right?  Just don't have it all the time.



It's a simple toss together.  Fry the bacon. Set it aside. Lower the muffins in the toaster as soon as you crack the eggs into the pan. Sprinkle with salt and pepper. Carefully turn the egg over so you still have the yolk a bit runny.

Once the muffins are toasted place a slice of cheese then bacon on them, add the hot eggs atop and you have a hot breakfast. I'm sure I need to cut way back on these as cholesterol can be an issue and really, who needs this more than twice a week :-)


I didn'tt have much in the way of foodie posts this week.  Still preparing meals and looking at cookbooks and online recipe but this sandwich is the only offering for Weekend Cooking this week.

  1. Funny, I have been craving one from McD's lately. We don't get them as they don't make a gluten free version for John.
    I could try making the English muffins...
    Even us Canadians have been glued to your news this week. I only fear what might happen next.

    1. Jackie, if you can make the muffins or get a gluten free version (maybe a Whole Foods store?) then you'd love this. So fast.

      Oh, the news is crazy right now! It's like something from a movie. I certainly hope they invoke the 25th because that kind of crazy doesn't need to hold office again. Maybe he'll go to Russia to avoid prosecutiion.

  4. As you say, it's been a very bad week for the country, and all we can do is sit tight and hope it all ends without another disaster and more deaths caused by the now-demented president.

    I tried the Egg McMuffin once -- didn't like it. Rubbery overcooked egg, flavorless dry muffin, blah cheese. But I'd just LOVE yours with real cheese, real muffins which you clearly toast just right, and properly over-easy egg!

    1. Mae, I am not sure if the riots will be over but I certainly hope so. The supporters for George Bush didn't go crazy after he lost his election but he didn't get people whipped up in a revolt. Probably because he's sane.

      We use McDonalds to connect to Wi-Fi when we need updates but haven't been in one in ages. My phone is now sooo slow.

  6. We do this too! So delicious and tastes better than the Macca's version. While we were away we had an amazing egg and bacon roll with spinach, hash browns and relish. I think I am going to try making this version one Sunday morning soon!

  8. Oh this looks delicious! I love these but McDonald's version always tastes a bit artificial so this looks way better. We were at St Jude all day Wednesday so I really had no idea what was going on until that night and I just haven't had the emotional room to even look at any more.

    1. Katherine, it was crazy. I am so sad a police officer lost his life trying to defend the Capitol.
      Yes, you need to try this sandwich and have a hot breakfast at home. Saves money and it's better that McDonalds!

  9. Yum that sounds good! And I'll admit I did have one of the McDonalds version just this morning lol. I felt a little guilty, trying to eat healthier, but I ate it anyway. :)

    The homemade version does look a lot better!

  10. I'm at my desk, eating a Kind brand frozen smoothie bowl. It is delicious, if one is at one's desk and unable to cook an at-home, McDonald's-esque breakfast sandwich. But I better not look at your pics much or my stomach won't be satisfied anymore. Yummy post, Tina.

    1. Stacy, I have seen the Kiind brand, mostly the bars. You are doing way better and eating healthier! This is a splurge breakfast, or it ought to be, because if I keep eating them my cholesterol will be off the chart!

  11. You can't beat starting the day with one of these. I used to hit McDonald's about three or four times a week when driving to work. Since I'm not driving anymore, that's a habit I've lost (along with the daily expensive coffee drink).
