The Home and Camp Kitchen

Hello and thanks for the comments/emails I have received recently. I have been offline, more like not making time, with our recent camping trip and our hellhound Loki.  I will update in the upcoming  Sunday Salon linkup.

For now, lets visit with In My Kitchen and share with the weekend cooking series.

 First, the outdoor kitchen.  This is our setup at Stephen Foster Cultural Park where we recently spent 5 days.  It was so nice we could have spent more time but our campsite was booked and we'd probably run out of food. 

The camp kitchen has a Coleman stove where the veggies and potatoes were cooked.  Doug has a Weber Q 1200 gas grill, handy and just large enough, easy to pack for travel.

Grilled ribeye with French green beans and scalloped potatoes was one meal we enjoyed. All of the cooking was done outdoors.

Home kitchen - this week's feature is Picadillo.  It's my SIL Barb's recipe and a damn fine one at that.  The aroma of garlic, peppers and onions always gets my stomach rumbling.



Simmering....I always add loads of olives.



Here it is plated.  Served with white rice, El Ebro black beans (the best!), Dole Maduras and homemade bread. For Barb's recipe click HERE.


A dessert indulgence this week was Tiramisu.  We hardly ever get something this rich so it was quite a treat. 



The plan today is to answer emails, visit a bit and go through all the photos I took camping. Planning on  trying Patatas Rellenas with the leftover Picadillo in the next day or so.  I hope all is well in your world and you and yours are happy and healthy.

  1. I honestly do not remember the last time i had Tiramisu. The best i had though was in my student days when my landlady an Italian woman brought us some over to eat.

  3. Oh, you make me want to get out in our RV so badly!! We haven't camped since November. :( We hope to head out again once the rain lets up. We have the same Weber, although ours is a 2200, which is pretty heavy. Since our basement storage bays are already full of other essential items, we put the grill in the coach while traveling, but it takes two of us to get it in and out since it weighs so much. We finally decided to get a Weber Go-Anywhere grill. It's smaller and lighter, but still does the job. Happy travels!

    1. Les, I hope you get to go soon. It's always so nice to get away for a while and cooking outside is nice. That was a huge grill you had...glad you have a more portable one now.

  5. Tina, oh my goodness, olives... black beans... and TIRAMISU! I gave up on camping years ago (my loss) and wish I could tag along with you on your adventures. :) Good times and good eats! Take care and stay safe, xo.

  6. Your camping cooking is quite the contrast to ours. We generally cook in foil in the campfire. I've taken no photos; nothing was photo-worthy.

    1. Deb, I haven;t cooked over the fire but I saw many people who set up a tripod and a cooking plate over fire. Maybe we will try that one day.

    I've never heard of picadillo but it looks like something I'd love, maybe minus the olives. I love the worldliness of your cooking. That tiramisu looks DELICIOUS.

    1. Stacy, I bet your daughter would love to camp. We started out with a popup camper and it was fun. oh, if you get a chance try that picadillo, it's great. You can definitely leave the olives out but I love them. Some people add raisins or potatoes.

  8. My brother-in-law would envy that camp kitchen set-up! Your food pictures make me hungry (it's time for lunch) and I would love to visit that park one day. Loki looks very comfortable!

    1. JoAnn, they have cabins at the park but they aren't pet friendly so we could never use them. They look nice though. It;s a great park, we are going back in a few months.

      That camp kitchen is a breeze to set up. There's a paper towel rack on it too but I usually forget to bring them out of the RV.

  10. i love tiramisu! i almost bought some at the deli today. how lovely to get away for a few days. i can't wait to head off for a weekend trip somewhere. Loki looks very happy there on his chair. thanks for joining in IMK this month. lovely to have you. and thanks for using the logo.

  13. Cooking outside is the best! We always do when camping, it is part of what makes camping so much fun. Love the picadillo, and I am with you, the more olives, the better!

  17. Your steak meal and picadillo look great! My husband made tiramisu at Christmas this year, but it had been a long time since the last time we had had it before that. I'm not much for camping, but I can see that it would be a great way to go off the grid for a while!

  18. Just the idea of getting away somewhere is delightful. You had quite the gourmet setup, it looks like a lot of fun. These days camping is quite the thing, I understand camper sales have gone through the roof.

  20. Ahhh my dream man would know ALL about the camping like this. Because I know nothing and have never been. I've got a BFF girlfriend who has tried to get me to go camping with her, but cooking is not her thing so we'd be eatin whatever is cold and can be grabbed from a cooler. You lucked out with a man who knows how to use a stove and a grill!

    All the food in this post looks delicious, but those ribeyes are all I need.

    Loki!!!! Look at you in your chair, waiting for a bite of meat! That makes me so happy to see him on a camping trip.

  21. That tiramisu looks divine! I've only made it a handful of times but I sure love eating it straight out of the bowl :) In fact I think I could eat a packet of those biscuits on its own... And maybe a tub of Mascarpone too!
