Chicken Stew for a One Pot Meal
{ Because of course you eat a hot meal with a 102 degree heat index!}

Almost time to go home and sort through the boxes of kitchen ware to put up in the "new" kitchen.  In the meantime, despite the heat of south Georgia, I made a stew one evening.  It was a camp stove meal and I can tell you, all the work was in the prep.  

Once it was chopped and measured it went together in under 10 minutes.  I love one pot meals!

This is a stew of chunks of chicken, black and red beans, sauteed onion and yellow peppers, half a can of tomatoes and chicken broth.  It's very thick and I imagine it would be great over rice but we just ate a bowl as it is for dinner. We had leftovers too :-)



Since I didn't measure much of it I can't share a recipe except to say I used roughly a pound and half of chicken, half an onion and an entire pepper. Both cans of beans were the El Ibro brand (so. good.)

  1. That looks delicious! I made spaghetti last night (in the RV) and the outside temp was 103. I think the inside temp was 97, but we'd only had the AC running for a short while since we had just arrived at our site. I think we'll have something a little cooler for tonight's dinner!

    I eat my favorite recipes all year round whether it's hot or cold. I have a/c and heat so it doesn't matter to me :)

  3. Clever use of on-hand ingredients. Was it already-cooked (or canned) chicken to speed up the time you needed to have the burner on? Sounds quite good for any season.

    1. Mae, I used boneless skinless thighs but I’ve used rotisserie in the past on a similar take of stew.

  4. I love one-pot meals too! Nothing better than an easy stew when camping -- even when it's hot out. Yes, I bet this would be good over rice or noodles, but yummy on its own. I bet you can't wait to get into your new kitchen.

    1. BFR - it is such a quick meal and a good go-to when you are short on time. We are finally home and yes, the kitchen is amazing! I am figuring out where to put things.

  6. I would have definitely eaten this dinner! When you have limited resources (whether food or equipment) almost any dinner is appreciated! I can't wait to see the new kitchen...

  9. Stew is a perfect camping meal! I'm weirdly seasonal about recipes - Meatloaf is only to be had from Labor Day to Memorial Day and kabobs are the opposite. There's no rhyme or reason for it but I have a few things like that. Soups and stews were on the list too but lately I've been adding soup occasionally to the menu rotation and I know Jason would be thrilled with a stew. He loves them!

  11. When I was working, I only did one pot meals. And I only did one pot meals that would last two suppers.
